What is Our demographic?

Little or nothing to do with distillation.

I just hate when people associate us pineys in S NJ with those idiots. We have enough stereotypes of our own, no need to add to it. :D

28 year old white male from the heart of the Appalachian Mountains. I have always been interested in learning all of the ol' timey traditions of the mountain people and this is one that has really captured my interest. Oh, I have a couple college degrees (Biology and Geology) and work in the oilfield so I'm not home much and do alot of dreaming. Happy Shinin'!

Danespirit, my mothers family is from Danmark so I'll vouch for the quality of Carlsberg, Tuborg and snaps. Especially Ålborg. If you work out a recipe for that let me know, it's not the easiest to find in the bottlestore here
It looks like it's easier to armwrestle with Obama to get the nuklear codes than to get the recipe of original Ålborg akvavit (Taffel akvavit) :problem: .
Anyway i'll try, and if i get my eyes on it i'll post it in the recipies forum.
Original it's made out of potatoes, nowadays they are using corn. It is distilled in a rectifying column and (not sure yet) they use a kind of "ginbasket" to add the flavour.
Flavouring: Caraway (main flavour),star anise (only a tiny bit) and dill (only a tiny bit).
Afterwards it is dilluted to 45%ABV,drinkable a once..served chilled, a good companion to seafood.
Got a 1st place as the worlds best akvavit by The International Wine and Spirit Competition 2002

:wtf: ,,not much help yet,but i'll try to find out more.. :)

Sixty something yo, wm, living in VA. Grew up in S. Cackalacky and lived my entire life in the South. ALMOST moved to WV once - don't know what the hell I was thinkin'.

No degree, worked in IT starting as a mainframe computer operator and finished my career as a network infrastructure designer/analyst - basically came up through the ranks. I'm also an artist (painter). I use high proof alcohol (Everclear) in my painting process and this was, originally, my main motivation for wanting to learn to distill. All the reading I've done here, and my partiality to a little drink of rum now-and-then, has somewhat changed my motivation.

Just sayin',

That guess would be correct, my good man! I first got into it many years ago when I came across an old journal that belonged to my grandpa. (According to family lore, he ran a still during prohibition and was somehow involved with a speakeasy.) But up until recently I was working strictly in cold compounding - which is essentially maceration without a final distillation - so yes, I've got plenty of recipes. I'll throw them up on some of the threads once I readjust them to work with a still.

Just had another birthday a few days ago and now I'm up to 47.

I'm only posting again because I just started a new birthday tradition for myself that involves making whiskey. I took the day before and the day of my birthday off of work. The day before was spent doing a slow spirit run of the low wines that I had been collecting in the previous month. Then the day of my birthday I sampled, selected and blended my cuts. Laying it all down on oak and hiding it away until my birthday a year from now - when I plan to repeat the same process while sipping the previous years run.
Having fun and great success sprouting/roasting/smoking my own malted barley
I brew in 50L batches using local natural spring water and fresh baker's yeast

42 yo male of Anglo/Germanic descent. Born in Baltimore, living (and I use that term loosely) in NC right near the "S. Cack" border. Had a full set of teeth when I got here. Now, not so much. Must be something in the water. Shotgun pellets in the rabbit meat don't help.
The wife's 10 years older than I. Thus, a lot of arguments end with, "I'm older than you, I'll do what I want!" "Yeah, you're old enough to know better! Now what!? Oh. Leave? Yes, dear."

(sigh...)

I need a drink.
