Post by Whiskeyoholic »

So I was on vacation in Tennessee, and bought a bottle of Popcorn Sutton white whiskey, has anyone tried this?
I didn't want to open the bottle, just keep it for display.

Never had it but I recently made some corn whiskey according to the recipe from his book and it's currently oaking and smells sooooo good. Gonna make a nice christmas present for a lucky someone :D . Why not buy two so you can drink one and treasure one??

My recipe was (5 gal fermenter) was
-2.5 lbs ground white corn meal [1/2 volume of fermenter in lbs of corn]
-4.5 lbs sugar [1 lb per gal of fermenter space]
-10 oz malted grain (I chose to use white wheat, and it was ground-up pretty good) [1/4 amount of corn in malted grain weight, could be increased]

What I did was pour boiling water over the white corn meal (took about 10L for my 2.5 lbs of corn) and stir it in real good. If there's not enough water it will be more of a paste than a slurry. Then once it cooled to 150F I added the sugar and dissolved it and then the malted wheat and stirred it in well. Then I wrapped lots of towels around it and let it sit for ~6 hours (overnight). The next morning it was right at about 90F so I pitched a packet of bread yeast and topped up with warm water (so it wouldn't lower it much from that 90F) and stirred the heck out of it. I let it work and settle for 2 weeks and did ~10 gal of ferment to get ~3 gal of low wines for the spirit run. In the end I have 7 quarts of distillate ranging from 70 ABV to 30 ABV. I'm aging the first 5 quarts as they were all above 55 ABV and saving the other two for another run.

I didn't do an iodine test to check for conversion of the corn meal but I wish I had, but judging by my yield (1.065 starting SG and 0.995 final) I'm pretty sure it converted well.

The parts in brackets are what the book calls for. He specifies all ingredients but the malt. That is left up to you. Just choose which kind you want but use 1/4 the amount of corn meal.

I wasnt impressed with it. Kinda like a fancy overpriced sugar shine to me. As far as legal moonshine goes, Man I wish I could make mine taste like Arkansas Lightning, thats my favorite.
