White Corn

White Corn
Has anyone tried/used white corn for making their recipe? I read that that is where the nickname "white lightining" came from. I know corn comes in a variety of colors, but the distillation process will strip out the color. The only corn I have found for sale, at tractor supply, is yellow feed style.

you'll have to dig up some old threads about the white corn on here.
It's been said that the original heirloom white corn was the choice due to higher starches.
Today's corn, white or yellow is all in the 70% starch ranges thanks to engineering.
The only place that we can find, or that I've been able to find, that sells white corn is this place.

If you have the ability to plant a crop.. some good heirloom corn seeds to choose from around the web. Farmer friend said he'd let me have some rows to plant and allow me the use of the shed if I need to size up my operation. Went to his place for 4th of july and that quart of whatnot i brought.. came back empty.

white corn would be nice if you could find it. growing it would involve planting, weeding, picking, shelling and cracking. not worth the effort to me for a little xtra starch. but if you have the time, why not.

heirloom variety vegetables have incredible flavor profiles. Those flavors have been lost in the hunt for genetic superior growers that are resistant to the simplest growth hazards with the aim to produce large fruit with minimal flavor. Think store bought tomatoes.. flavorless giant overpriced red lumps for the masses.
If all anyone want's is to buy a 10 buck bag of feed corn to make some hooch.. then that's what they do.
For me, The best part about this hobby is you get to control what goes in it and when you do it. If the whiskey needs a few years to age out right, then why not spend 1 year gathering up the best supplies to make the best whiskey you can.
it that means that i get to play farmer next spring then deal with all sorts of heirloom growing problems, picking and drying then cracking it to make next years whiskey.. then that's what I'll find the time to do.

Yeah, I'm the farmer type or should I say gardener type. Plus I like recipes that say, "combine ingredients. Set side for a week. Then......" I am also trying my hand at malting. Another not so simple task. That being said, if all is the same then until next year I'll stick with yellow. Maybe try grits for one small batch.
