Making Cuts

Post by Otis Campbell »

Alright. I have ran several batches of UJSSM in my 3" pots still.
I can easily notice the heads, hearts and tails.
Now..

My last spirit run was 8 gal low wines, 1 gal previous heads, 1/2 gal previous tails.
I collected in pints, the likker started running at 85%, I collected about 38 pints, the last being collected at 75%.
As soon as the tails appeared I shut it down.

The first 10 pints were strong with heads.
At pint 30 or so.. the heads were undetectable.
And everything in between you could smell it but was very faint.

Does this sound fairly typical?

I kept jars 13-38.

I know many frown upon greed. So a lot of you folks would only keep beyond jar 30?

That sounds about right. I dont collect in small containers anymore, as I go by smell, touch and taste to determine when to collect and when to go to feints. I always collect down to 20% in my feints, just for the next run.

+1 WERAT,
I was supposed to run a batch of my regular ferment last weekend but it was not ready due to high temps in my ferment.
I looked over at my feints collection and said close enough!
I would have been out of booze if I did not have the feints to run.
I only got one bottle out of the feints and it was not full. I sure am glad they make those 5 gallon bottles! I got 4 and 1/2 gallons of hearts on a feints run! And that was not diluted, I just add the water as I mix it up 1/2 gallon at a time.
Now this week end I will have my "regular" ferment to run and it will be weeks before I even have to get into it.

Gota love the feints runs!

Hi Otis,
I have found the heads to always show up again....that is, they dont clean up much with additional distilling.

I usually dont include any portions of previose runs in a strip run. That way I can make cuts more easily and decide how much, if any, heads to include in the spirit run after I see what i ended up with. But thats just my preference.

When you are runnin the still, make the cuts as you like to drink 'em.
