Is the iodine post to turn blue when it's converted over ?

You take a "clear" sample of liquid off the top of your mash (no solids in it...and not cloudy). Put a drop of iodine (or tincture of iodine) into the sample. If there is residual starch that drop turns "black"/darker. If there is no starch...is stays the same color (as the iodine started) — which is sort of a dark reddish/brown. The "blue" you are thinking of is a different test based on folklore burn test (ie., to burn it and if it's "pure" it will burn blue, and any other color flame means impurities). In reality..."all" ethanol burns blue, and as the proof lowers it will burn with yellow/orange flame up and till it will no longer burn at all. It has nothing to do with the presence of "impurities"...unless you consider "water" an impurity.

I did an allgrain beer today and when I stirred the drop of iodine in the sample it pretty much just disapeared after conversion. It turned the first sample black/dark which was one I did 5 minutes after adding the hot water to the mash, just to see.

In the same vein, was just wondering if Povidone Iodine 10% solution work?

+1 Usge. Blue, purplish black no conversion. Make sure there isnt a grain husk or any kind of solids it will skew the result. Sometimes, I like to get fancy and use chalk, drop a drop or schmear the mash on the end of the chalk and add a drop of iodine. The mash smear will almost disappear where your dropped the iodine and you're converted
