2008 pineapple wine distilled

Post by simpletime05 »

I had a 6.5 bottles of pineapple wine that I'd made back in 2008 that was just not good. I'd kept the bottles just in case I ever got into distilling, and truth be told; those homemade wines that were less than great were my main motivations for wanting to start distilling. To those 6.5 bottles I added 3 bottles of apple wine and a split bottle of banana wine, both from '08 as well. I wound up with right at 2 gallons in my boiler. I heated and ran it pretty quick, collecting a half pint every 10 minutes or so. I tossed the first 100 ml as the fores and ultimately I ended up with 8 half pints that started at 100 proof and dropped 10 points with each jar, the last one collected down to 30 proof. I was quite surprised how good the product was, considering how bad the wine itself was. Perhaps the apple and banana saved the day. The end result was a perfectly clear, sweet spirit that had a nice taste of pineapple. I was pretty pleased. Ive got it airing now and will see what its like tomorrow.

I wanted to share the small success I had tonight, this forum has been such a great tool for a novice like myself. Thanks!

Pineapple banana apple distillate-sounds decent enough to have as a juice with breakfast. Thinking of running it again or leaving as is? If you're running a pot still like me, I'd run again, make good cuts, and dilute back to a tasty proof. Congrats on making something good out of something bad. I've had a few requests from brewing friends to try and save their bad batches...

That's how I got into it, batches of mead that didn't turn out as well as I had hoped.

I do run a pot still but with only 4 total pints I didn't figure I would have enough to run it again. what do you think? And thanks, those bottles have been bugging me for awhile. I still have them airing out and the middle 3 jars smell like fresh cut pineapple.

how did the mead turn out? Ive got several batches of mead and variations of meads that I like just fine but I am curious about how they'd be after a run through the stll.

It's not my favorite, but it's not awful. I wouldn't turn my nose up at it, but I prefer the recipes that were prepared specifically for distilling.
