Maturing a wash (before distilling)

Hi all,

Is there any logic behind the idea of maturing a wash before distillation?
I.e, if I make a standard red/white wine now it'll improve loads in 12 months...would a wash also improve?
I have spare containers to store 5/6 gallons so I figured I could put them to good use until my still is built?

once the wash is fermented out in can be stored in an airtight container for a while, how long is uncertain some last longer than others, cooler temps will probably make it last longer. as for being better with age, i would say no as the flavoring your going to get in a wash comes from grains you use and i wouldnt reccommend storing it on grain. id rack the beer off into a different bucket seal it and store it in a cool place. i usually let mine sit after racking for a week or two just to let it clear then rack into the boiler, this lets the suspended yeast and solids settle out

My thoughts were that I could brew up a either a neutral spirit or possibly a lentil whiskey that I've heard good things about... I could then rack and filter along side my normal wines, and store in 5 corked DJs ready for distillation.

I thought it might lead to a smoother final product? If not, I probably won't bother!

Some do all of their fermentations in the warm season and then distill in the cold season.
I have aged rum beer out of laziness and was pleased with the distilled result.
Trample the injured and hurdle the dead.

I'm geographically located in a country that doesn't have much temperature fluctuation, and can generally ferment all year round.

I've just got some equipment (vessels) that are surplus to requirement, so figured I could age some wash in them.

I think I'll give it a go with some neutral.
