I'm going to "cheat" and go with a Clawhammer kit. I figure if I screw it up I can at least have a nice (although extremely expensive) decorative piece. Even if I move into a bigger unit later, this is still a really nice looking "sculpture" that will have a prominent place on a shelf.

Look up "parrot" for pics.

They allow you to keep an eye on ABV during a run "on the fly".
