For grains i mean the grains for flour type "00", but I think to add sorghum, it's common in my country! thanks for the advice!

Interesting (useless?) factoid - In Africa, Sorghum Malt, not Barley Malt, is used as the main malt grain to make Guiness Foreign Extra Stout. Sorghum is also gluten free, so makes a gluten free beer, for those intolerant. Of course that matters little to stillers as it doesnt come over in the vapor.

I used to live in a neighbourhood with a lot of Guiness FES drinkers. We used to get the Nigerian and and the Irish version. The sorghum makes it very slightly sweeter. Both are good, if you can get them.

Hey jimbo quick question on this recipe. With us-05 how long do your ferments take? I'm staying between 61 and 63f the first couple days the gravity dropped nicely but the last 3 days I've been sittn at 1.01. It doesn't look to be stalled there are still bubbles and a bit of a cap but the gravity hasn't changed for 3 days.

61-63 is nice and cool. THat will be a nice ferment but might take a couple more days. 68 is usually a week. Cooler may push you to 10 days. If youre at 1.01 you wont get much more out of it. It finishes them last couple points real slow. Id say give it 2-3 more days then run it.

Yea I don't have expectations of clear wash going in the boiler. I picked up a big nylon bag. I think I will go ahead pull off the top half of each and strip it tonight and squeeze out the rest and let it settle out and strip it tomorrow. Wish me luck.

Alrighty guys, stripping runs completed, Ive got about 4 gallons total of some pretty nice smelling low wines. I havent diluted it down or even checked the total combined ABV just stripped both into a corny keg together down till 25-30% was coming off I will dilute to 40% with distilled water if it is above that I just havent checked it yet. Spirit run will have to wait till next week. But in the mean time Im gonna be getting some oak ready. Lets hear some opinions. I have a bag of JD chips, should I just use them straight out of the bag, Char the JD chips and then use them if so Light or Heavy char. Or go get a board of white oak and make my own 1"X1"X6" then toast and char myself, I will add I have not toasted any oak myself up to this point but there is a first time for everything. Ive got a wide mouth 1 gallon apple cider jug I think a 1"x1" will fit in the mouth, if not I also have a couple 1 gallon glass pickle jars with PTFE everlasting gasket inside the lids. I hope to get enough to put a gallon back for 6 months at least, and if I get more than that (which according to my numbers I should) keep a little white to sip on on SPECIAL occasions and a little white to age for 6 months as well.
I read that scotch is aged in used sherry casks so that is why Im thinking the JD chips may be better since they are used once as well.
Whats everyones opinion, if it was you what would you do for aging this.

The JD chips will work in a pinch. But not ideal for a few reasons, lots of end grain exposure (bad) and lack of char. I would flame em up to a light char on one side only (they're thin so you dont want to burn all the sugars), then soak them for a couple hours in water, then toss them in.
Look at 1/2 barrel planters at the home improvement stores. 30 bucks, and more JD oak staves than you'll need for a long time. I cut these up into 1x1x5 sticks on the table saw, sand the grime off the outside, char them all 6 sides, soak for a couple hours in water, then use 1 per quart. Seems about right.

Today i have done a starter for my DRY-97 yeast of Lallemand (http://www.danstaryeast.com/products/br ... beer-yeast) with a mash of malted barley (SG 1.053), i have bought 25 kg of sorghum to use with my malted barley (10 kg), so everything is ready for this beautifull modified recipe!
How much barley and sorghum i have to use if have 4 fermenter of 25L? I don't ferment on the grain so i think that 20L in one fermenter is right, so i can do 80L of mash, how much barley and sorghum?!?!?! (Jimbo i think you are the right person for this question! )

Alrighty finally got my spirit run completed, after cuts I ended up with slightly less than a gallon total. My OG was slightly lower than Jimbos and was reflected in the "keep" portion. I put the entire keep cut in a gallon jug with lightly charred oak and will keep out of it for 4 months at minimum. The white was good after airing but I think the time on oak is a must with this recipe so Ill be stuck sipping on sugar shine until this ages up, or until I find a diffrent AG recipe that tickles my tastes a little better in the white.
This was my first AG that I got to do strips and spirit run and I must say I am a believer, the heads and tails of this were WAY better tasting than the hearts of the sugharheads Ive always done. So I picked up some more grain and a 120qt cooler/mash tun. Im thinking Jimbo's Wheated Burbon and Gumball Head is in my very near future. Just gotta get some 6row and Ill be good to go.

this morning i have done a stripping run for my 50 L wash of this recipe and i obtain only 5 L of product, i don't know if it's ok, but i have problems during the mash because my efficiency is very low. For the flavour i think it is very good.

50L of wash at 8% should give you about 10L of stripped 30%. Did you run long enough? I run until the distillate is running at about 18-20%, potstill head is about 210, 211F (99-99.5C). Are you sure of your SG and FG?

i have stopped the run around 20%, but the problem is the SG, it was too low. For the spirit run i have this 5L and 2,5 L of feints, can i distill them in my boiler of 25 L or i have to add another batch? thanks

Sure thats fine. There's no minimum in a boiler, liquid expands 1500 X going to vapor. It will find the exit. Ive run 5L of wine in a 32L boiler before, worked perfectly. Be sure your spirit run is 40% or less and let er rip.
