Still has a little ways to go. I'm hoping it finishes by this weekend so I can strip it, then do a spirit run with the other half gallon I have. Looking forward to it.

I'm stripping my 2nd gen of this recipe. I have 5 gallons of ~12% potential alcohol + ~600ml 35% tails from the first strip. When I'm done, I'm going to do a spirit run. I'll watch some college basketball while shinin. The only way it could get better is if I was watching college football. HAIL.

Have just started a 40 litre batch in the fermenter, 6 kg sugar,1-1/2 litre of Blue Agave, 1/2 cup of fleischmans yeast.starting SG-1.090, that was yesterday today SG-1.070, looking good

I made the original recipe as my first try, but added half a pound of brown sugar to a 5 gallon mas, probably didnt add anything but had it out as I was making a beer the same day that used brown sugar. also used an ale yeast as I had that handy also. fremented out in about 5 days to 7%

I ran it out and had about a 3/4 gallon of this, and put some light american oak into quart jars, and cut it to about 90 proof at first. This is by far the smoothest most clean flavored drink I have ever had, several people that know tequila like it greatly enough so that Im making a new batch and will use more agave to try to get further flavor. This will be one of my staples.

Ferment started off well then went really, really slow , did not ferment dry and stalled out , ran it anyway, MY wife is the tequila drinker and she says smells and tastes like tequila, I will try again ,not sure what to do differnet to get to ferment dry this time.

I fermented this starting on 3.30.14
Meant to but did not take a sg reading
Yesterday 4.10.14 it has really slowed down
Really thinking about leaving it for another week
open to suggestions or thoughts.
I did 2 5 gallon buckets one light and one dark/amber
will be interesting to see what we get.

I let my 2nd generation set for over a month. I agitated buckets without opening the lid, just to make sure it completely finished out. I did 2 stripping runs, then did a spirit run. The people I've given it to seem to like it a lot.

So the count is in, the votes have been tallied.

We did 2 five gallon ferments 1 with light syrup
and 1 with dark, (Amber) both C & H products.

Did not find any noticeable difference between
the 2 types of Agave syrup. Collected 1 gallon from
each 5 gallon ferment.
Combined them for a second run with the small
still and thumper.

I was amazed at how long we got nearly 90 %
before it started to drop, nearly a 1/2 gallon.
Turned to tails really fast at 40% so i shut it down
and left it for 3 days to air out.

Last night we mixed it all and cut to 40% with
spring water. My tequila drinking buddy says it is
as good as any $30 dollar bottle at the package store.

Put it on thin sliced un charred white oak and this morning
I thought WTH lets have a look. It has picked up in 12 hours
a very pronounced amber color and woody smokey taste.

I think we have a winner, at 9 bucks a gallon. . .

Further testing was conducted over the weekend
this has been confirmed to be Tequila by the
5 independent researchers whom took part,
and then another part and a sample, and a sip,
then one more for testing purposes only, perhaps
just one more to be sure what I thought on the last
one. . .

Ok not real tequila but damn close
and worthy of continued research & development.

Ive started two new batches using 88 ounces of raw agave Madhava agave and 10 lbs of sugar to get 7 gallons of mash.
Used bread yeast in one batch and ec-1118 in the other, both started at 1.105 SG and the bread yeast is just finished, waiting for it to clear to see how it goes,
When the other is finished, Im going to run both ans see the difference.

I've got 2 750ml bottles of finished product I'm keeping white, and one large bottle (amount unknown) of 140proof that I have on oak and in the attic of my garage. I'm going to leave that for a year or so and see how that goes.

I'll start two new 5 gallon batches soon too. People seem to like it a lot.

Wifey says the "Man Cave" and the "She Cave"
need to get together and become the "WE" cave. . .

This is her justification for a bigger "work" area,
being called the outdoor kitchen. 24' X 32' X 12'
walk in cooler, all stainless counters and work tables,
just bought a 6 burner, with a 36" X 30" flat top,
huge 36" double ovens, gas stove today for $350.00,
will be the focal point for her rouge canning operation :shock:

I tell her she is crazy as hell, but I am digging the idea. At lunch
today she called the new forthcoming "we" cave the summer home. . . :wtf: :wtf:

running my first batch of the newest wash, this is the bread yeast batch, and Im so impressed.. I was sure the bread yeast wasnt going to be good but damn got 170 proof the first quart 165 the second and 155 the third, fourth quart is starting to get down to 140 or so gonna run this down to the dreggs and see what it all comes out like. im going to keep 6 gallons of this fermenting for the forseable future, last batch I oaked was the bomb, I think this one may have more flavor and the oak shuld make it more tequila like..

just finished cutting the clear down to 100 proof, and have a gallon and a half of the best flavored clear Ive made so far, got it in two gallon bottles with oak chips now, gonna let it set for about a week and see what she taste like at that point and if I want darker coloring I'll hit it with dark toasted oak chips.

I oaked with 6 or 7 very thin 1/4" thick, 1 inch wide,
6 inch long uncharred pieces and pulled the
wood after 24 hours, That which we let go for
a week was WAY over oaked IMHO

yeah Coyote it has picked up a lot of color overnight, I'll probably take it off tonight or try it every hour or so until it tastes JUST right ha ha.

Decided I need some smokey flavour in my fauxquilia - so made up a solution of about 1 litre and a half of agave in water, bubbled mesquite smoke through it with a Polyscience Smoking Gun. I have added that into my ferment.

Shall report back with the final results when it's done.

I am trying this recipe for the second time. The first time everything stalled out and I ended up with a very sugary wash and no drink. I am intrigue by the idea and figured it was worth a second try.

I used
2lb of agave
4lbs of Raw cane sugar
2 gallons of backset from the first failure
1T tomato paste
1 Pack EC-1118

Once again fermentation seems to be starting out super slow. I am also noticing that it seems like all of the yeast if floating to the too and forming a cake. This happened on the first run as well, and is something I haven't really seem before. This time I am giving the carboid a nudge a couple of times a day to knock everything back down. Has anyone else seen this phenomenon before (no this isn't the normal head you get when fermenting). I am worried it's going to stall out again.

Little confused on your bill 2lb agave and 4 lb agave that's 6lb's agave correct.Not sure why you worded it that way? 1T tomato paste?What is your SG?
