in need of some insight

Post by pot belly shine »

Hey y'all, I resently started fermenting Ujssm in 55gal barrels. I was on my 8th gen prior to starting this when i noticed an issue. I started the batch last night and checked my SG it was at 1.020.... not 1.060 where it should be so what am i doing wrong? what do i need to change or add? of course you need more info so here is what i did.
20 lbs of cracked corn
20lbs sugar
5 gal backset
6 oz tomato paste
1/4 cup baking soda
1/4 cup bakers yeast
40 ish gallons water
ph 3.8
temp 86 degrres F when yeast was pitched
bubbling this am when i checked SG
Any and all help is much appreciated. Happy stilling

For 20 lb sugar and 40 gal water, 1.02 is just about right. It'd take 55 lb to get you 1.06.

Thank you heart cut, now if I up my sugar to say 25-30 would that push me closer to 1.06?

Get that pH up to 5 or it's gonna stall on you.
