Awful Smelling And Tasting Distillate

Post by Phate »

Hey guys after finally getting my still clean with several vinagar and sac alc runs I decided to try my hand at uncle Jessie's sour mash recipe. I followed it to the T and everything seemed to start off well (I.e an SG of about 1.062 and a plesently sweet taste). After about 4 days the Bubbling ceases and the SG drops to about .994 with a dry wine taste. The first time I tried to run it I waited about an hour or so and siphoned it into the boiler. I gave it a low flame and about an hour later I started collecting distillate filling jars at about 4 ounce intervals. One thing I noticed is that each jar had a pretty fowl smelling odor that's kind of hard to describe sort of like a burnt rubber/vomit smell that Is strongly apparent across all the jars. When I tasted it I do taste some alcohol but it overall tastes the way it smells, really bad. Feeling determined I threw everything out and started fresh. I followed the recipe again to a T and everything started off the same again (the way it should). The difference is this time I let the fermented stuff (wort?) settle in a fridge for two days and then at room temp for another day. This time it looked a lot cleaner so I ran it through the still again. Unfortunatly, I got that same awful smell that stayed throughout all the jars. I did notice this time that distillate had some light colored specs of something that I never had before. I am assuming that the stuff in the boiler burped into the worm or something despite me leaving about an inch and a half of headroom. What do you guys think?
