Winemaker taking the next step

Post by Cefalu »

Hi everyone, I am new to distilling, but I've been making wine for 8 years. Fall of this year I fermented 4,000 pounds of grapes. I am located just South of Napa, so winemaking is pretty easy to do here.

I am looking forward to making use of my pomace by making some grappa.

For Christmas this year I built a 5 gallon copper column still and ran 5 gallons of my wine through it. Then 5 gallons of beer. The wine came out 145 proof, it got great reviews. tasted very much like grappa. Not surprisingly, the beer I had to toss.

I have a mash going now: 65% corn, 10% rye, 13% wheat and 12% 6 row malted barley. My yeast was wine yeast, ICV D254 I had left over from this falls ferment. When I bought the corn/rye/wheat/barley, the gal at the beer/wine place remarked, "got another shiner" to her co worker. My cover was blown.

I am looking forward to learning more about this cool hobby.

Thanks, I am drinking the tithing as we speak!

I know about the feed store from my chickens. I picked up a 50 pound bag of cracked corn there, $13.99, such a deal. My chickens stuck close by as I put the grains through my blender in the yard.
