Corn to Water ratio?

I plan to start making uncle jesse's simple sour mash and need to know what the ratio is for corn to water, the recipe has 7 pounds to 5 gallons of water I will be making 8 gallons at a time, is there a calculator for that as well as Sugar ratio or just check with hydrometer? Thanks
