If your making a wash with corn for flavor and nutrients, then cracked is good enough.

The "Uncle Jesse's Simple Sour Mash Method" (UJSSM) isn't a true mash. It's a sugarhead which means it uses processed sugar for the yeast to convert into alcohol. The cracked corn is there for flavor. It makes a good faux whiskey and is a good starting point for a new distiller.

To make a true grain mash, no sugar is added. Enzymes are used to convert the starches in the grains to sugar before starting the fermentation process. The process is a little more complicated and requires that you mill the grain before cooking and mashing. I would recommend that you start with something like the UJSSM recipe before attempting an all grain (AG) mash.

Good luck with it and stay safe.

Cracked corn will work just fine. Get your strike water good and hot. I go around 190F. The add the corn and stir with a drill and paddle mixer for a while. It will totally gelatinize.
