Backset - how can I use it

After a corn mash stripping run, I've saved my backset. How long will it last. I'm thinking I want to use it control PH in my next mashes. Is there a test to see if it is spoiled or not? What other uses could I use it for?

I use some backset in most of my washes to help keep the Ph in a reasonable range. If making a flavored spirit like whisky or brandy I use some backset to dilute the low wines to around 30 percent for the spirit run.

The only thing I check for is mold growing in it. If it has mold I dump it. Keeping it refrigerated helps it last longer without getting moldy. Now the rum guys, on the other hand, seem to like to let their backset get all kinds of funky.
