can I use mash vs using backset
I am currently making ujssm and it has been finished fermenting for 3 days I took the wash off the grain befor second fermentation started and added some water to keep yeast healthy. Can I use some of the mash to add back to the grain as backset or does backset have different qualities. I can't run the wash for 3 more days and I didn't no if the grain and water will be ok until I can run the wash and get some backset? Any answers?

You sould be ok letting it sit on water till you can get backset. If you have the freezer space save a jug of backset for future use when you dont have any fresh.

If I am understanding you correctly, your ferment has finished, you have drawn off the wash to be distilled, and have then added just water to the grain/yeast that is left to keep the yeast from drying out. Your question is if you can add back some of the wash to replace the backset addition before you add sugar and start the next ferment is that correct? If this is what you are asking I would not add the wash back I would either A. just add the sugar and the remainder of the water and let the ferment start and run without backset, the backset is just primarily for flavor, your ferment should work off just fine without it. Or B. just add a slight bit of sugar to help feed the yeast until you can run the wash and then you will have and can add the backset as normal.

Yes that is wat I was saying. Thanxs ill just add alil sugar to the fermenter

I have pulled the mash off of ujssm and just added a gallon of water to cover the corn and then have it be 3 days til I actually got to run the mash and add the backset. Everything worked out fine. I didnt add any sugar. Your call, good luck.

I would just add extra backset to the next batch. All of it, I'm assuming, is being saved up for a spirit run, so it will even up.
E.g. 3 batches of 33% backset or 0% and the next two are 50% would even out math wise, not sure I would do 50% but you get what im saying.
