I have a dozen or more Successful Usjjm's, and a few All grain. Now I set to make my first mead with honey. I use 5.2 ph stabilizer, epsom salt for minerals, distillers yeast. For this mead, I have picked up some Fermax yeast nutrient. Will this be enough nutrients to have a good fermentation? I have thought about pectic enzyme? Thank you ahead for any help!

Treat it like a sugar wash - so yeah, that's plenty.

On epsom salt and fermax -

Fermax is a premium nutrient contains diammonium phosphate (DAP), dipotassium phosphate, magnesium sulfate and autolyzed yeast.

Fermax is about a teaspoon per gallon...but remember Fermax has DAP IN IT!
Epsom salt only adds one mineral - magnesium. And just like with DAP - Fermax already has epsom salt in it. More epsom salt will just add more magnesium and sulfate ions. Extra sulfur could only be a bad thing, and they don't need any more of that mineral.

You only need pectic enzyme if you put any pectin in, which is contained in many fruits. You aren't going to add anything containing pectin, so pectic enzyme wouldn't do anything. And even if you did put fruit in this wash, you're distilling it, so cloudiness is alright - you really don't need it here. Save it for something you plan on drinking without distilling it, like a mead with fruit added, or wine.

Carbohydratesn Im glad I asked, Will leave Epsom out and use the Fermax. Have heard alot about honey shine, cant wait to try. Im going to use 18lbs of honey to 7.5 gallons water. 2.4 pds. Per gallon. Thank you for the insight if the nagnesium in the dap.

personally, I would let your mead not only ferment out but age as well prior to being distilled, Young mead tastes like crap. Crap in = crap out.....usually
