Very interesting sounding whiskey, if i read a similar description in a liquor store i would likely try it as i love trying new, different whiskies. i definitely think its time for you to play around with some gins...Keep up the good work woodshed :thumbup:

4-3-14 A month after running this. The smoke is back but the vanilla is not. Running the smoke recipe tomorrow modified with the addition of 2 row. I think this will balance the heavy grapefruit/evergreen. This will go to wood as a short age.
Looking to release in the fall as our Cricket John Whiskey. For some reason crickets keep showing up in the john at the distillery.
Hence the name.

I use the wild yeast on mustang grapes each season to make wine. The key is not to wash or take the grapes off the stem. Mix with water and sugar and cover with a towel or cloth until fermentation takes off. JMHO

Good read Shed. I getting ready to try harvesting a viable wild yeast strain to use in a malted corn/malted white wheat bourbon style drink. I read that rasberry canes are a good source along with aspen bark. Don't have aspen but I got raspberries. Hoping I can fine a good one. Thanks for the inspiration.
welcome aboard some of us are ornery old coots but if you do a lot of
reading and don't ask stupid questions you'll be alright most are
big help
