Just ran this first wash last night. Was gonna strip it but decided do a slow spirit run and pull a quart of hearts out, rest go for low wines. Run went great, nice flavourful rum. IMO the cuts were easy to make even off the still. I must have drank a couple oz right from the still. Real smooth stuff. I did collect everything in jars, and marked where I think cuts should be made. I'll go back taste and smell everything tomorrow to make final cuts.

Yummyrum,
Your method has me curious. My molasses is 47% sugars. Using pugi's recipe my abv was at 18, so I split the wash and added water back to 5gal total.

Next batch I cut the sugar in half and still was in the 14% range.

Cut more sugar (only adding 1.5lbs per 5 gallon got me to 12%

Im ready to do a wash with only molasses water and dunder. I think that will give me the best results. Im after a full flavored black rum.

Any tips you are willing to share is appreciated

I use 5kg blackstrap, and 9-10kg Demerara sugar in mine for a 15 gallon wash. Haven't really measured the SG as it doesn't do much for you with molasses anyway but I estimate 11-12% maybe and since the sugar is the darkest I can find around here, you get a damn good amount of molasses flavour. My dark rum is definitely a hit and that was only on the second generation. I made a white, gold and dark, gold being simply oak aged, which was my least favourite. Next gen will be white, dark and black. But if you want a nice full flavour try Demerara sugar plus molasses, you get a good amount of sugar in there without killing the flavour like white sugar. I think it might be cheaper than white too.

Did the cuts on it this morning. This makes some really great rum, very flavourful. A little too much flavour for my liking so I'm undecided what to try next for a lighter rum. Should I use 1/2 the molasses and run it same as this batch, or stick to the same recipe and do stripping run then spirit?
