Striping Uncle Jesse's Sour Mash Questions

Post by bads197 »

I did a 50lb bag of corn with 35 gallons of water and 50lbs of sugar.

Got about 9% from an SG reading last week, it's ready to run.

I ran the first run this morning and got about 3.x gallons. I dumped the first 200ml (13gallong boiler) and then kept everything after that down to 20% alcohol and put it in a glass carboy.

I'm running the second one here tonight as I have to go out of town tomorrow. I'm going to do the same thing and run it all the way down to 20% and combine with the first stipe.

My understanding is that i can at that point put both in the boiler (most likely about 6 gallons of striped juice) and then fill the rest of the boiler with the hot backset off my second/final strip.

This will get my % below 40% alcohol, have something in for a bit more flavor.. and then I can do the spirit run.

Hows my interpretation of the process so far?

I'm probably going to toss the corn int he fermenter after straining it out and putting in a second carboy along with topping off the second carboy with backset for the runs i do next week when i get back.

Really unsure how much i'll get from the spirit run so i'll have to see how it comes out.
