Ground and pressed a bunch of apples and ended up with 46 l of juice. SG was 1.045 so I added 5 kg sugar in 4 l of water and bumped it up to 1.072. Added a couple crushed vit B and 10 g of yeast nutrient.

I don't have any method of measuring ph.

Now to where I might have killed it.

By mistake I grabbed my citric acid bottle and dropped 5 g in when i mean't to put 5 g of metabisulfite. Sheesh. So i added 5 g meta and let it sit for 24 hr. Next day i scooped 500 ml of wash and rehydrated 2 pk of ec1118. Didn't jump to life. Oh no! Pitched it anyway. Next day nada.

Sprinkled 2 more pk of ec1118 and checked next day...nada. 15 g of Red Star in 500 g water and 15 g sugar. Took off like expected and pitched that in 26 degree celcius wash. Nothing.

Did i kill it? Hate to dump a whole day of work down the drain. I will get some ph strips and some calcium carbonate to try to save it as i suspect ph is too low. What you all think.
If you can't be a good example, at least be a terrible warning
