You got yourself some. There is another just plum thing I did with wild yeast. I'll send some of that also. You can age it according to your tastes. I have other packages that got to go out as well, but haven't had the time to finish these fruit things yet.
To paraphrase jumbo...i think. I just got done making me some unicorn piss! Lol. All feints,heads and tails,everything from chicken scratch to corn to rum all sugarheads . Ran twelve gallons at 35 percent. I got a shit load of something...

Material didn't show up to the job today. Gave me the time to do some soldering, cleaning runs, and a brandy run. Just got started on the brandy 5 minutes ago.

14 lbs potatoes
Starch converter of choice
3lbs of sugar to kick it off
1/3 cup of distillers yeast
Cube potatoes and heat around 150f for 30 min. The pour contents in fermenter and add surgar and other components. Do yeast as usual and add. I let mine go about three weeks. Two weeks in I add a cup of Mrs Butterworth pancake syrup. Not sure if it is what gives the final.product a buttery taste by it does.

Not a big brandy drinker but i decide to use some of the 400-500lbs of plums from one of our trees and made some wine.. distilled two five gallon batches. will put away till next summer and see if its worth making again.

I run a scaled down version....potato vodka. The potatoes turn it into a real nice drop...!
Got cleaned up and pasted up for a spirit run of UJ gen 5 tomorrow and a feints run of 5 gal or so Wednesday . Last 3 days I set 80 gal of UJ gen 1 in hopes of having some decent white dog to sip at Jedfest .

I am restarting my UJSSM runs..
I never admitted it here but my 11th generation stalled out FLAT.... after about 2 weeks I added more yeast in two of them and more yeast and sugar in one of them..
It had been over 90° in my stillin shed most of the summer so the heat may have killed them.. At the 2 week point I added 2-3 cups of oyster shells in case the pH drop had killed them.. I dumped them this week out in the field behind my house.... FYI if this ever happens to you be sure and dump them WAAYYYYYYYY out in the field behind your house.... We sat in the backyard tonight with the kids and grandkids and they asked several times if the baby had puked... did the grandson shit his drawers.... did someone puke.... The smell is still lingering from dumping 10 gallons of wash. I was chuckling but my SOH was really concerned because something was causing that smell...
Funny thing is that where I dumped the wash is a white film everywhere.. and the flies are going to town... It is totally dry hasnt rained in 3 weeks and that spot is covered in flies.... I dumped the grain further away (because I thought it would smell longer)..... The birds wont touch it.... and the rats have left it alone....
Anyway Labor Day I am starting 3 five gallon batches of UJSSM with all of the expertise I have gathered along this way...
Oh BTW.... I had to clean my still from 3 months of inactivity. I used a shotgun brush on the 3/4" column and pulled a slug of blue shit out of it.. I have done a sac H20 run and a sac vinegar run..... just for giggles I am doing another vinegar run tonight.. and then before my wash is ready next week I have some feints and low wines to run through for another sacrificial alcohol tun..
By this time next week I hope to be runnin a first gen UJSSM....

I've noticed many animals aren't interested in either fermented grains or spent grains in stillage, except those f**king little flies.
Re; Stalled ferment, I don't do sour mash except a little to acidify the mash when I have it, but I've read here and elsewhere that as generations of UJJSM (or other backset-heavy recipes) pass, the amount of backset needs to be reduced, or else ferments stall.
Doing 50 litre ferment of fresh green rye malt.
Still learning about the malting process. Last batch seemed a little under modified, this batch a little over modified.
I think the secret is to use well-modified green malt to mash with adjuncts. I did add a kilo (1/4 of grain bill) of oat grist to one of the batches, and the mash seemed a lot sweeter for it. Green rye malt is a different beast to regular old store-bought barley malt. Gives the mash a slimy property, like soy milk, which I think might be from the extra protein, maybe just from bad conversion, though I am getting more or less the SG I expect, as far as I can measure.
Friday night,wash is done working,got a full tank of propane and all the time in the world!
time to fire it up! I got 15 gallons of gen5 ujssm made with 1/3 oats I'm gonna split it and run half with four generations of feints trashing the fores catch to twenty percent and rerun with the rest of the wash. Make my cuts on that run and mix with my previous four generations hearts,then oak...for a few months at least.

Had a short run of UJ that I threw a couple of gallons of feints in with to make volume . Didn't turn out as well as I expected . If I don't drink it up before it will be blackberry for Jedfest . Waiting on 80 gallons of gen 1 UJ wash to finish . Cold nights has slowed it down .

Also,checked a half gallon of the same that's been on jd chips and discovered...i overoaked the shit outta it...oops.
it shall now be called TAILS and reran tomorrow night. And from now on I will be using the tp method for oaking. It's ...slower? Gentler? Not sure but save the chips for nukeing or the BBQ,not long term.

Just powered up with 4 gallons of fu¢k€d head cut runs. Thumper is charged with 1 1/2 gallon water. Gonna take a heavy fore/head cut and collect the good stuff. Then rerun the good stuff with the thumper charged with apple juice and pie spices.

I just took 6.5 gallons of UJSSM and Sweet Feed that had either a bit too much heads or tails in them for my liking and watered them down for a fast run through the column. I compressed heads and took them off slow then opened it up to let it roll. Smelled and tasted pretty good off the finger as I was running. Charred some white oak from a tree out of my yard put sticks on two gallons of it. I'll see how it turns out.
I haven't ran my still in about a year, been running my beer rig every chance I get. Now my beer supply is up and my whiskey is down. Need to get to stillin
