Blackberry melomel I made a few months ago and just got done bottling. 5 5ths of still and 20 12oz bottles primed with honey to carbinate. Plus the bottle that didn't get full. Mm leftovers.
Maybe I'm not such a lightweight after all. Yesterday the room was spinning in spite of me not drinking anything. Seems my ear infection is affecting my equilibrium
Thank you Jimbo. It's not all that big of a deal. For the past few years I've gotten these damn ear infections throughout the winter months but it's better than the walking pneumonia I used to get every winter.
Hope it's not too bad Cranky. I was laid up for a few days a while back with a serious case of vertigo. I found that a few ear washes with hydrogen peroxide eventually cured it - along with lots of ginger ale for the puking that's a side effect. One of the worst things I ever went through. Laid in a recliner chair for 2 days pissin' in a milk jug.

Been there. It seemed to peak last night and I've been washing the ears with peroxide since I woke up the other day and couldn't hear anything out of the left ear and I think it's getting better.
I raise this glass in the name of good health. Hopefully you'll feel better soon Cranky. I know Frodo's wife is having health issues right now, and my thoughts go out to them as well.

I'm drinking some of the first rum I made from my first ever pot still which is a 15.5 gallon keg. I ran a few days ago and nuclear aged 1 bottle for 3 cycles with charred apple wood and maple wood. A couple drops vanilla then cut to 48. I already drank 1/3 of it and startednuke ageing a 2nd bottle no vanilla this time. Thank so much HD couldn't have pulled it of without you.
Summa Corene's S3 hearts on once-used sherry oak @45%. Damn fine drop now that it's been hangin' around for a while. Never tasted anything this smooth and the sherry oak is shining through with a nice rye undertone. This was fair lightly oaked and the color sez so. I think I'm going to lighten up my next batch of whatever like this is and see what I'm really tasting.
A couple fingers of clear apple pie. I'm gonna pour a few more to confirm that time is being good to this spirit. Next batch I might try using enzyme converted wheat for the base.

Well since im new to distiling and have yet to run some of my own, my evenings are rounded out with some 12 year old Gibson canadian wiskey. This happens to be a recent switch from my staple, 40 Creek Barrel Select.
Sampling some corn, rye, oats and barley. Only 2 months young. Pretty tails heavy right now. Not overly objectionable but hoping they smooth out some more with time. Seems like a lot of potential but not there yet.

I took some 100% frozen apple juice concentrate and brought it up to a quart at 80 proof. I added 2 teaspoons of caramel extract. It's pretty good. It's a little sweet but it get better every day.
