Starting a new one for me: we just butchered all our turkeys. Using the leftover feed we batched up as the base for a ujssm process. Composition is:
12 bushels wheat
6 bushels oats
3 bushels barley
(Not using it all at once!!!)

Trying out something new-
5 gallons pressed apple cider
Heated to 150
Dropped in a pound in a half of malted barley in a strainer sock and let it cook for about 80 minutes.
I pulled the sock out and pressed the juice back in.
Sg to 1.007 with cane sugar (and a tad of water for "fk it" 's sake)
Made a starter using distillers yeast adding water, sugar and a dash of DAP.
Pitched at 80* and it's already at 1.000 a few days later.
Planning to try out a new burner, so we shall see how well I can dial her in.
Ive never tried *this two row* malted barley with this must, we shall see.
Edit* I found a brewshop local that has expanded and carries damn near everything... The line of grains and types is holy!
I'm trying one of their cracked 2 row.

I didn't make anything, but My Wife made me smile. No not like that , get your heads out of the gutter
I asked my wife to get me a whiskey, she obliged and as she brought it to me she smelled it and asked, is this yours?
i confirmed that it was indeed my own produce and with that she had a sip, and to my astonishment she didn't pull a face, instead she said it was nice!!!
She even compared it to midleton very rare ( the only other whiskey, she have sipped and not pulled a face), she is of course off her rocker, it's nowherer near that.
But nice to know i've made a smoother produce than the majority of the big boys, and that is with a cornflake wash 6 months on oak and apple.
Can't wait to see how my AG turns out

Cherry. Now that brings back some memories, Cack. Some of the very best rum I ever made I aged on cherry. I hate to admit it, but that was when I was 17 years old. I'm 73 now, and a couple of the guys who used to enjoy that cherry aged rum way back then are coming over in a couple days. I think I'll start on a run for next year - who knows - they might remember it.Note: I'm using this process for non-whiskey barrel smoking chips that may need some extra seasoning.

I finally finished up my controller box today, thanks to help from many of our extremely patient compadres:
It's wired directly to the element right now, I just ordered some 30a/250v plugs so I can disconnect it to drag the keg outside for draining. Note to self: Install drain.

Have some wheat/carrot mash perk'in ..... new experiment .... see if the carrots present a different mouth feel / nose to the vodka.
I see others trying rums and fruit ... two things I haven't tried yet ... I have LOTS of cheap molasses locally (beet sugar plant) ....
My journey with distilling started after tasting Calvados ... I'd love to work on an apple sipping whiskey if anyone can help direct me .

I started a raspberry panty dropper with the first large batch of rum I made. 1.5 lbs raspberries split between 2 quart jars and one quart of 70 abv rum. I nuked them both to form a vacuum while I wait to add sugar to the drained fruit.(Im under the assumption that if it'll force flavors out of wood it'll do the same for fruit)

After 5 days, yesterday night my gallon cider finished fermenting. Gonna leave it resting today before siphoning into secondary fermentor and testing FG tonight.
In the meantime yesterday I completed my 1 meter liebig, 22mm over 16mm (7/8" over 5/8"). It needs cleaning but here it is already leak tested ok.

Ran 6 gallons of apple juice wash - single run with thumper - boiler and thumper charged with same wash. I have two 5 gallon runs of apple pomace sugarhead to do yet.

I didn't make anything today, but I did help a friend do a stripping run on 35 gallons of fermented plums.
He's making Rakia from plums grown on his farm.
I kept the spent fruit and added more sugar, water, nutrients and yeast.

Did run 2 of 3 of apple brandy - this time the wash was an apple pomace sugarhead. I'll do run 3 tomorrow which is the same wash. These are single runs with the thumper charged with the same wash. Today's run is airing for cuts and blending tomorrow. It will be combined with tomorrow's run for aging.
Run #1 was a different wash made from the pressed juice of the same apples - no sugar. It will be aged separately. I did the cuts and blending today while I did the second run. This might be the last stuff I run until spring.

Ran 25 gallons of sugar wash. Got a bit over 2.5 gallons of neutral out of it, (had some tails left over from other runs that I threw in also.) DW wants some vodkas, so I thought I might play with some flavored vodkas while I'm at it. Any suggestions for some of your favorite flavors and/or essences?

No more emptying buckets from the the leibig and shotgun during runs. plumbed in a drain pipe. Less work and more sittin on my ass on HD during runs now

I was cleaning up and grabbed all the feints I had lying around. They ended up being about 50/50 UJSSM/rum. It came out really nice and smooth. I forgot how good "rumsky" can be.

Chutney run of last seasons plums, didn't seem to scorch, tons of flavour and aroma and nearly double the average yield. Was a darn long slow run but the most important one

Yep its been a 700+ liter marathon that has taken something like 6 or 8 months of "spare" time to run but if you ask me, the longer it sits on the marc the better it is.
I did this 220 ltr independent of the rest as these were red flesh plums and the first lot were yellow. The sliv is slightly different but similar enough for me to include the faints from the yellow flesh chutney run, that is a run of the combined marc once its beed strained somewhat

Did cuts on some all bran from yesterdays spirit run and put it on cherry and honey locust to age.

Proofed down the last of my CB&BM (Cornbread and Buttermilk) whiskey - one 750ml bottle and about 6oz in a mason jar. Probably won't make more until next spring or summer.

Set up a cornflakes whiskey wash with 500g flakes, 2,65kg sugar to 15L volume. Hope the bakers yeast will work fast
