Booners casual corn

After a success with Jimbo's all wheat I'm going to try my luck with the Booners corn recipe. The enzymes arrived from EnzyMash the other day (fast service from them), picking up the corn today and hope to mash this tomorrow.

One question I have for you all - Woodshed ferments off grain for this recipe, I'm thinking about fermenting on the grain and then using the spent grain for a gumball-head type wash, has anyone done this before?

Yep, it works just fine. I do keep the sugar head and associated feins separate form the AG stock.

I've done a sugar head over Booners, but I used corn sugar instead of cane. It cost a little more but has none of the bite. 50# of corn sugar (look for dextrose) runs about $35 at Cash N Carry.

I take off my Booners wort then do a Gumball head and ferment that on the grain thinking I may be able to pick up some flavors and sugars from the not quite spent grains. And gives me two ferments going at the same time. But I do like the idea of using a corn sugar next time.

15 Gal of water just under boiling
9 ML SEBStar
9 ML SEBAmyl
30 G dady yeast

I followed Woodshed's method for time and temps - did I say how cool it is to watch that alpha-amylase rip through that polenta?
I took a reading before adding the glucoamylase of 1.04. After a few hours and the temp down to 90 I got a reading of 1.06, pitched the yeast and it's off to a happy ferment.

Bobs redmill is a great brand. That will make a good drop. :thumbup:

Huh, did you handle all of that right in the Brute can?

Still happily bubbling away, smelling of corn goodness, sg is almost down to 1.000 hoping to rack it off in the next couple of days and start the gumball head.

After pressing and racking I ended up with a little under 12 Gals of wash. Did the strip run last night, tossed fores and started collecting at 60ish% down to 20% with a yeald of 2 3/4 gals. I might do the spirit run tonight :D

I also started a sugar head wash from the spent corn - 20 gal of water and enough corn sugar to bring it up to 1.060, it's happily bubbling away and smells great.

Did the spirit run tonight and had a light bulb moment (or was it a duh moment) - My take off rate and numbers were exactly the same as my last run of Jimbo's AG. I think that I may have my little ol pot still and ferments dialed in or was it coincidence??
