I decided to go with "hooks rum" from "Tried and true" section as the main information source. So about 2 weeks ago i set up my rum wash with 2.2kg of molasses, 1.25kg of sugar, little citirc acid and DAP and fermented that with bakers yeast, volume was 15L total. It finished fermenting really quick after a fast and vigorous start and i let it sit for some more days. Today i did the first stripping run to get some lowwines and the first dunder. With 5L of the dunder i set up the next fermentation, same as above without the acid.
The stripping run was cloudy and brown in color at the beginning, the last half was clear - is this normal? Collected 2.5-3L with 40% low wines. Lots of character in the lowwines detectable.
Will strip the 2nd wash, too, and then i have 1-1.5 kg molasses left, so maybe a 3rd smaller wash will add to this. Cant wait to do the spirit run though
