Well shit, I went back to check my notes to make sure I wasnt lying to you, and turns out my post is already a lie. Its not from 2/23/15, its from 8/23/15. So its 6 months old not a year. I think the label on the barrel got munged up from spillage and I made another, and didnt read the date correctly. ha! SO anyway, good news I guess, its tasting damn good at 6 months, not a year. ;) To answer your question, finally, it's off 2 plate flute.
In theory there's no difference between theory and practice. But in practice there is.

Very cool, congrats Shine!

I was just thinking today about making a "bourbon" beer. Doing a recipe like 50% corn, 10% rye malt, and 40% malted barley. Maybe even a little toasted wheat...
Fermenting half for whiskey, and adding hops to the other half and making a beer.

Those beer making skills will really pay off this summer when it gets hot and you just want a cold hoppy ale.

Trying out a 4 month old COB (?) with smoked this an' that I got from the HD Distilling Goddess today. The smoke is very understated and takes a few seconds to show up. When it does, it frames an almost fruity smooth front to a smokey caramel back and nose that'll be pretty easy to get carried away with on refills.
Gonna have to try this one out a few more times (this evening). Gotta make sure, ya know. :ewink:

One of my favorite ferments is Deathwish Wheat Germ (DWWG). Boy does that smell nice when it is fermenting. The yeasties just love it with the bubbles almost boiling. For the last couple of runs, my favorite grocery store was only stocking the larger Kretschmer original toasted jar (I think it is 20oz). Rather than re-calculate, I used the larger jar which is maybe 60% more than before (was 12oz). Anyhow, the ferment went fine. I run a Rad concentric. For this batch I stripped twice in pot-still mode, then refluxed on the spirit run to get as clean a product as possible. I did my cuts and brought it down to 60%, but I've kept it white. Anyhow, the stuff has a definite tartness, very gin-like, with some fruity notes. Not to let the opportunity be wasted, I immediately got some tonic water and lime and I've been enjoying this odd version of gin and tonic. I was hoping to get a super neutral that I could set up for some other recipes, but I'm not feeling too bad about what I ended up with. I'll get back to the drawing board for my neutral while I enjoy my gin and tonic.

Bumbleberry whindy. Its a mix of corn, corn malt, rye, white wheat malt, peaches and dried cherries aged on a mix of toasted and chard white oak and a sick of cherry. Only been on oak for 2 months but it has potential.

Dirty filthy store bought. I'm trying out some scotch to see if it's worth making, or some perverted version of it.

An old fashion with Buffalo Trace bourbon. Going store bought today  Going to get my still Tuesday, unless i have to work then it will be Wednesday. Should have my stuff to start my mash tomorrow, going with ujsm. Then a buddy is coming over to run me a 240 for my bunner from my box, then game on. I cannot freaking wait!! This will be my first time solo. Long term goal, bourbon that will make the Van Winkles

Back to topic. Either i drink the shine neat or in a sour. 2 shots moonshine, 1 squeezed lemon, sweetener= very nice......Or i have one of my bourbon. Most bourbons are sipped neat, then the others, just buffalo trace with an old fashion with cherries done the right way. Old schools normally with my old fashion with the orange and cherry not muddled, just stirred.

Last note, going in early tonight to work so the wife suggested i have a drink to go to sleep early. More over time for toys and bills. Anyways, great wife for the suggestion, i have great kids too. Have a good one folks!

Yea he got picked on a lot in grade school . He was in the third grade and the sixth graders would pick on him cause he was the same size as them. So I tell him one day just smack them and I will back you up in the principles office. Guess what , they left him alone after that. Did you see the size of his hands? You can almost drop a quarter through his ring finger. Yep he ate a bunch too. Went through a lot of deer feeding him that's for sure, but he is a good one to have around when something big needs moving. :D

Went though the same thing with my 6"2" grandson at 14 when he started in high school football . Senior was picking on him and 'non aggressive ' grade school training was still implanted in his brain .
>Told him ,"Take no shit . Next time he starts ' drop him like a shitty diaper and don't stop until he and the rest get the message ."
>He did and the coach complimented him on how good an ass whuppin he could deliver . It went no further than the locker room and the team gives him respect .
