i picked up 20# of white rice for 8 bucks. this will be my second attempt using this enzymes without malt. going for 2# per gallon.

curious to see what kind of gravity i can get.

I grind the rice and use 2.5 lbs per gallon for a 1.07 SG.

36 hours in and the color is excellent, starting to notice some oaky vanilla aromas. Now to put it away and forget about it

Definitely some good knowledge in here for sure. Don't do what I did and do what they say. Eventually I quit doing what I thought I knew and DID what the ol salty boys were saying. That's where I got to where I am now. Which I can say was A fun journey. Not easy nor short but fun none the less. I'm going back to beer for a bit, as I have some projects to attend to. Good luck to all and thank you everyone. I'll post often but less frequently unless something interesting happens. Now the 3 year wait
