Hi All,
I'm running mash today and I am uping the quantities of maze and barley. The original recipe calls for a 90 mins steep at 65"c.
My question is with the additional ingredients should I increase that time up wards of 90mins for steeping?

The length of time at mash temperature remains the same. It is probably going to take somewhat longer to get to that temp. That being said, mashing for longer periods regardless of mash size may or may not improve the conversion percentage. A lot of other factors come into play besides temp and time.

Are you increasing the amount of malted grains and/or enzymes in proportion too? If the ratio is the same then the time should stay the same. If you're worried then leave it a bit longer...

An increase in grain in relation to water translates to an increase in viscosity. Enzymes need to circulate to convert starches to sugar. It will take longer to get a good conversion but a may not be all that noticeable. I have mashed with 3 lbs of grain per gallon without too much trouble. Beyond that and I find that my efficiency decreases some.

something went badly wrong and I ended up with a mess on my hands. I think I tried to do to much in a smaller mash ton. My plan was to sparge extra liquid thought it to make up the quantity. Boy was I wrong! The maze just sucked up all the water. Thank god it was in a bag, so I pulled it out put it in a cooler topped up the mash ton, reheated it and stirred about 90% of the maze back in and it was OK. God knows what the SP will be. This is one wash I will never be able to repeat! haha!
