raspberry/sugar brandy

Post by Beerswimmer »

I made my raspberry "brandy" again. So easy and delicious I might have to make it all year.

Recipe for 20L wash:
7lbs white sugar
5lb bag of frozen raspberries
water
EC1118
Water to fill

I put the sugar and raspberries in a pot with water and cooked the sugar down and smashed the berries. Then poured into a fermenter and topped with cool water. Pitched yeast and covered. Fermented dry in about a week and a half. Since I doubled the recipe I stripped down to 20% and did a slow spirit run on a potstill. Tastes sinfully good! Aged on toasted French oak sticks for a few months it's ridiculous!!!!
Ut Alii Vivant!!!!
