My first Rum series
So i´m in the middle of a rum series.
I decided to go with "hooks rum" from "Tried and true" section as the main information source. So about 2 weeks ago i set up my rum wash with 2.2kg of molasses, 1.25kg of sugar, little citirc acid and DAP and fermented that with bakers yeast, volume was 15L total. It finished fermenting really quick after a fast and vigorous start and i let it sit for some more days. Today i did the first stripping run to get some lowwines and the first dunder. With 5L of the dunder i set up the next fermentation, same as above without the acid.
The stripping run was cloudy and brown in color at the beginning, the last half was clear - is this normal? Collected 2.5-3L with 40% low wines. Lots of character in the lowwines detectable.
Will strip the 2nd wash, too, and then i have 1-1.5 kg molasses left, so maybe a 3rd smaller wash will add to this. Cant wait to do the spirit run though

Cloudy is fairly normal but brown isn't. The brown is probably puke. Sounds like you were running to fast and hard. May I also suggest running a thumper cuz it will act as a slobber box so that don't happen to ya again.

The brown indicates a puke, nothing to worry about, it will clean up on the spirit run.

Rum washes get pretty foamy when heated causing it to puke. I run twelve gallons at a time in a keg boiler but I add a half stick of real butter to the boiler to keep the foam down and prevent puking.

I use veg oil but it works great.

Antlers- try the real butter, it does add a slight buttery taste to the rum but I find it very complimentary to the rum. Un fortunately it ages out by three months or so.
I use veg oil but it works great.

JB, I've done and like the butter but the flavor dissipates pretty rapidly. Do you know how to keep the butter flavor in? I've tried in boiler and thumpers and it never sticks around long.

Hmm the Rum is not to my taste till now, hopefully it will get better with some more time. Sits on some oak, color is wonderful golden.

Pot stilled Rum is pretty rough for months . It will keep getting better . Also a lot has to do with which type and how much Oak you use

i think the more molly you use and less white sugar will help. ive moved on to brown sugar and have really enjoying the results over the using white sugarYummyrum wrote:Pot stilled Rum is pretty rough for months .
