RedStar DADY fermentation temps
For all corn mashes I am currently using some US-05 I have left in my fridge. I bought a pound of RedStar DADY yeast in which the directions state to ferment 80-89F. I have a fermwrap to use on my fermenter in an insulated box, but I am not sure if the fermwrap can keep the temps in this range in my garage this time of year. I know for sure it can keep it at 73F which is the temp I use if for some styles of ales. Anyone with experience know if this yeast will be ok in the 70F-75F range? I suppose it will take a bit longer, but will it be ok?

I have not fermented using Red Star DADY yeast, but regularly use the Red Star dry active yeast.. and I have found it works best around 82F, give or take a degree on each side..
My fermenting area at this time of the year is 62F and I ferment using a heat / brew belt, and insulate the fermenter... the other thing is that I plug my brew belt in a dimer switch setup, and control the heat imput of the belt and temperature from there..
But fermenting at a low temp with this yeast, especially below 75F, it is very slowwwww, 15 days verse 6 days.. as for affecting the favour, I have not see a different..

I have a rum ferment on the go using Red Star bakers yeast. Two heat belts and a blanket sorta tented around the fermenter keeps it at around 80 F. My room is usually around 65 F, good for EC1118 but bakers yeast like it a little warmer.
Edit: I have also noticed a little longer ferments especially this time of year up here in the frozen north.

I am gonna try and find one of those silver sided blankets like rescue units use for hypothermia victims and put that on the fermenter over the fermwrap heater and have it all in the insulated chest. Set my ATC for 85F I hope that works!

Check out the car windscreen sunshades. Generally the same material but thicker and easier to handle cheap as chips.

DADY Optimal fermentation temperature is 90°F +/- 2°F. (31-33C)
Re-Hydration method;
Re-hydrate in a stirred vessel prior to pitching. Sprinkle the dry yeast
into 10 times its own weight of water or wort at 35C ± 3C (80F ± 6F). When the yeast is
reconstituted into a cream (15 to 30 mins), continue to stir for another 30 minutes. The yeast
cream is then ready to pitch into the fermentation vessel.
