On the old forum I had posted a request for favorite recipes and would like to get the thread going again.

What I'm looking for is recipes of favorite washes (whiskey, rum etc) as well as recipes for how to process the spirit after distillation. Favorite liqeuers, brandies, vodkas etc. When I have enough collected I'm going to upload them to the net and make them available to anyone who wants them. There's a lot of distillation wisdom out there and this is my way of making sure that it doesn't get lost.

This is an excellent Amaretto recipe:

4 cups sugar
4 cups water
Bring to boil, then reduce heat and simmer until sugar is dissolved. Stir occasionally. Remove from heat and cool to room temperature.
Stir in:
4 cups spirit
4 cups brandy
1 bottle of almond extract
Bottle and let sit in a dark place for 2 to 3 months.

haven't tried this one but it seems fun.

Orange liquer

-put 60% alcohol in a preserving yar
-hang above the alcohol an orange on a piece of string
-put about 5 cloves and stick them into the orange
-after about two weeks you can add sugar (250 gram/liter)
-dilute to 40%

the alcohol will evaporate and dissolve some of the ethereal oil out of the peel of the orange and also take some clove essenses with it.

Personally I like to add 6-8 ml glycerine per liter to my liquer so the liquid 'tastes' thicker. This way you will sipp and not drink too fast.

Homemade Kahlua (my personal favorite) Recipe
• 6 cups sugar
• 6 cups water
• 20 tsp instant coffee
• 1/2 gallon vodka
• 12 tsp pure vanilla
Mix sugar, water, coffee together and bring to slow boil. Turn heat down and simmer 1 hour. Remove heat, cover liquid with plastic wrap. Let sit for 12 hours, then remove wrap (it will pick up film from the top). Add vodka and vanilla, stir well. Bottle.

Very easy and VERY good!

What do you mean when you say it will pick up film from the top?

LOL! Good question! I got this recipe a while back when I was looking to make some Xmas Kahlua. Went through the process, put Sahran wrap over the top and let it sit. Next morning I expected to see something but there was no film or anything. So I bottled it and it was excellent.

Now I'll bet that if I didn't keep that in the recipe someone would use it and then come back and say "What's this !&#*!*%# film all over the top!" The sahran wrap doesn't hurt anything so I left the recipe as I originally copied it.

BTW You can use 1/4 Vanilla bean per 750ml (no extract) bottle but let it age about 3 weeks and filter before drinking. It's better this way if you have the patience:)

Is that really 12 teaspoons? Sounds like a lot. But, then, what do I know!!

12 TSP isn't really that much in this size batch. I usually just make 1/2 batches and end up with not quite 2 full 750ml bottles. If you like Kahlua, this is really tasty and easy to make. :D

8 Cups Water
8 Cups Sugar
2 Tbl Instant Coffee
1 tsp Vanilla
2 750 ml Vodka
2 750 ml 151 Rum

Boil sugar,coffee,and vanilla together. Simmer for 20 minutes stirring frequently. Place in freezer and wait for 1 hour or completely cooled. Then mix in the booze and drink straight away.

Ok. This is what my wife and her two girlfriends make when they are in a hurry for a party drink. I personally havent tried it but I know by the end of the winter all three of them have gained about 15 or 20 lbs. apiece. LOL
This recipe was given to me by the 3 Amigos just now. Ha!

Peppermint Schnapps Liqueur


1/3 cup granulated sugar
1 16-oz. bottle light corn syrup
2 cups 80-proof vodka
2 tsp. peppermint extract

1. Combine sugar and corn syrup in a 2-quart pan over medium heat. Heat until sugar dissolves, stirring regularly (about 5 minutes).
2. When sugar has dissolved, add vodka and stir well. Remove mixture from heat and cover tightly with lid. Let cool.
3. Add peppermint extract to mixture and pour into a seal able bottle.
Makes 4 cups.

Bailey’s Irish Cream

--------------------------------------------------------------------------------

8 oz. Whipping cream
1 (13 oz) can sweetened condensed milk
¾ cup cheap vodka or brandy or whiskey (I use vodka)
2 Tbsp. Chocolate syrup or Cream De Cocoa
1 Tbsp. Instant coffee or Kahlua (I use the instant coffee)

Combine all of the ingredients in a blender and refrigerate in a glass container.
Makes 1 quart.

My wife came up with this concoction a few years ago and we call it Foo Foo's Kahlua. Its tasty but very rich!

She used to mix it with whole milk to make a mudslide or whatever but now she uses 2% milk instead. Its still a good way to put on the pounds though. :lol:
