In this instance, I was being a little obsessed with complexity. As far as I can tell it is the single "guaranteed" downfall of young "single malt". So its the one thing I have been trying to scrounge up a bit ;)

just found your youtube channel..had to watch all the vids..while I am past the sugar washes, and such now......I am excited to keep following along. Sometime soon, do a video showing the Booners all corn whiskey. That would be great one for video. :)

Hhahaha, and no one would improve without them! But, I think I am a lost cause as far as spelling is concerned :mrgreen:

Really can't wait to compare the different generations. I striped gen one today and started gen 2. Should have the video out this week. I kept a small sample from mid-run. It seemed the best way to compare generations (as I will likely strip 3 gens to make a spirit run each time).

Awesome thanks for the recommendation. Actually, a few people have asked for the very same. So it will be pushed to the top of the list.

I am thinking something like this at the moment (who knows though!)

- At least 6 gens of UJSSM (two spirit runs)
- Another "neutral" to then make gin (something akin to Odin's I think)
- All molasses Rum
- All grain with malt
- All grain with enzymes (bottled)

You should love the UJSSM I liked mine even better with about 5% rye flakes added

I'd personally do 2x what you did to build up aging stock faster. it really starts to get good at generation 4-5

If you want to speed things along depending on the ph of your water you could use more backset in the first generation (close to %50) so long as you add a bunch of oyster shells to ensure the ph does not get too low. It will get things stating to mellow out faster. After the first generation cut backset back to about 25%

I having issue finding a container for you. Will send you tracking when your meat marinaid is incoming.

Thanks for the tips man. I also had the backset from the whisky there too. I was going to use that to jumpstart the process. But in the end I thought it would be smart to do at least 3 generations "standard" (for one spirit run). After that I will likely start messing with some barley/wheat/rye.

Thought it made more sense for the content that way, even if my stocks are not as good.

Funny that! It did get a fairly serious chop a little while back though. I thought I needed to chop it off, my wife said no. Who am I to argue ;)

Love your video's, keep up the great work.
Numerous 57L kegs, some propane, one 220v electric with stilldragon controller. Keggle for all-Grain, two pot still tops for whisky, a 3" reflux with deflag for vodka. Coming up, a 4" perf plate column. Life is short, make whisky and drag race!

Yep, I'm keen on this as well. Here is whats on the cards right now:

Birdwatches
> Gin (small batches on the mini still)
> Perhaps a few other experiments (infusions etc)

A rye whisky of some description
(perhaps a Canadian to keep moving around the world. Potentially all grain)

Really want to try something with grapes

Definitely an all grain corn whisky
(potentially with oats, potentially an Irish style)

Jessie, Looking forward to the Canadian Rye, but when you mentioned a distill using Grapes can I possibly steer you in the direction of doing a Cognac style offering. Making a Cognac and flavoring it to a discontinued product called Navan has been one of my utmost goals!

Thanks my man! I really hope it goes that way. Honestly, I am no longer hopeful for a quick fix on that. Thinking it may take a while.
