Hi distillers
I am a European and so I am more accustomed to terms we use here, but we use something called Diastatic malt, or Enzymatic malt, that is rich in enzymes to be used with mashes with lots of unmalted grains and adjuncts low or with no enzymes for starch conversion. I think 6-row barley malts are used in the US for the same reason, but I am not sure if they are the same thing or different type of malts with similar characteristics.
What I am trying to establish how much diastatic malt/6-row malt is needed to make a high corn grist convert its' starch? I've never used this type of malt before.
Example, assuming the diastatic power is the same between the two, how much diastatic malt/6-row malt is needed for a mash of 70-80% corn and 20-30% Rye? Will 5% high enzyme malt be enough or is it 10%?

You need a MINIMUM DP of 30 to convert starches. Get your average DP per lB. per ingredient and divide . EG.. your recipe is 20 lbs. You have 10 Lbs. of 6 row at 160 Lintner (Lintner is the DP)
and 10 Lbs. of corn at 0 L. 20 lbs. total. That would be 10x160= 1600. then, the corn 10x0 = 0 so 1600 + 0= 1600 ÷ 20= 80 ...Plenty of DP

The diastatic that I am familiar with is Weyermann's Enzymatic malt which had 90 DP (Lintner). So where does that put me?Still Life wrote:Assuming, as you propose, diastatic malt has the same DP as 6-row's 180,

At 90DP, you'd have to go 30% diastatic malt to meet the minimum 30°L.

I tried to use Frunobolax formula above but I didn't get it right. What formula are you using to make that calculation?

It was just an example. You have to look up the DP of each ingredient you use. Multiply the dp of each ingredient by the pounds of each ingredient, add them all together and divide by TOTAL weight in lbs.

At 90 DP you need 1/3 of your grain bill to be malt.
1 pound of malt at 90 DP will convert 3 pounds of grains.
That's using the 30 DP per pound rule of thumb.

Well this is embarrassing.
Seems I posted some real nonsense math on this thread earlier this week.
I had a toxic reaction to some medicine and apparently was really out of my head for a couple days,
apparently spewing a lot of nutty stuff.
