Re: My First Rum
If they're 1/2" I would go 5 long and 2 wide, that's what I use per quart and nothing has been over oaked as of yet and I still have a quart from January this year with the cubes still in.
I couldn't fin the Hungarian cubes today at the brew shop but he did order me some so I'll have them soon.
When are you planning to run the spirit run?

Looks like too much end grain IMO. I would go slow with them. May end up with oak tea.

Re: My First Rum
So I was reading a thread on spiced rum and Tater mentioned using Mulling spice for a spiced rum. I did some looking around and ordered this stuff to give a try. I'm just going to do a small amount in a quart of my rum to see how it turns out. Has anyone out there experimented with this??

Re: My First Rum
I also got this stuff to give a try on another quart. The spice ball is stainless I thought I could use it for my shells in my next wash to keep them suspended in the fermenter. Also thought I could use it in my boiler with the spice in it for a spirit run??

Re: My First Rum
All tastes are different. I had spirals years ago and produced a bitter taste. Coopers answered me and said that end grain should be minimal. But what the hell do they know. We drink it the way we like it. Two each there own.nerdybrewer wrote:Sweet! Re: My First Rum
I've only done it from scratch.Old Town wrote:So I was reading a thread on spiced rum and Tater mentioned using Mulling spice for a spiced rum. One thing I learned was to go really light with the orange peel, a very little goes a very long way.
The chocolate rum I made last Christmas was a big hit, used good chocolate and made my own caramel and let it marry with the rum for a couple weeks.
That stuff went quickly!
I should make that again, Christmas is coming!

Re: My First Rum
Nerdybrewer that chocolate and carmel rum sounds good for the holidays. I hope the spice I got will make something good. Im going to do my spirit run on my rum tomorrow and go from their. I may decide not to put anything in it at all but what's the fun in that. I've never experimented with oak or spice so I'm looking forward to it.

Re: My First Rum
Working on the spirit run as I post still in the heads at the moment. Collecting in half pint jars so I can hopefully make some nice clean cuts.

Re: My First Rum
Old Town, just to let you know, when it goes on oak it'll taste better and better for about a month then it'll start tasting bad. Do not pull the oak! At about the three month Mark itll start tasting good again, and will continue to get better from that point. At 6 months it'll be awesome.Old Town wrote:Yeah I'll definitely be making this one again can't wait to get it on some oak.
Just so you know what to expect.

Re: My First Rum
Be sure to put a quart of white away to get some age on it, 6 months and it will melt in your mouth.
Be sure to go to kiwis guide for cuts, it's got a few diagrams in there for the easy aspects of it. It should get you rolling along but let your taste and nose do the final picking.
Great job, I've enjoyed talking and getting to know you brother.

Re: My First Rum
Congratulations.
Do yourself a favour and go to the trouble of making a rough sample of your final choice of blend before you commit to it. After tasting that sample, I've changed my mind a few times.

Re: My First Rum
I haven't made my cuts yet waiting on a new proofing hydrometer. I broke another one. I need to buy stock in those things. I want to get an accurate abv readings so I can try out yummys method for making cuts. I can't wait to get this stuff on oak!!
ShineOn don't worry I'm going to save me a jar or two of the white and let it get some age can't wait.

I'm beginning to like the oaked alot better but I'm still partial to my white rum.
You'll be happy with both I'm quite sure of it.

Re: My First Rum
I know this is an old thread but I need to bring life too some good rum. I have had six jars with oak qubs aging for about four months now. I tried one after the first month, not so good, month two little better. Rounding the corner of month five now and I am very impressed. I have a few jars with oak and mulling spice also. It's not bad but I prefer the oak without the spice. I'll give it some more time and see how it goes.
