Honey Bear Burbon ferment
I pitched yeast a week ago last Sunday and got good amount of activity for 3 days. I had to leave it for a long weekend away. Upon return I had a thin white cap, and what seemed like very fine bubbling. Checked pH and it seemed low, 3 or 4. Added more oyster shells with no real results. I have 10 gal. in my brute so I added 2 Tbs. baking soda to try and raise the pH. Wondering if I might have an infection? Or is the pH too low? Suggestions? My temp. Is 75

Probley is an infection probley good too. Probley done too. SOCD be along get ya straight.

the lacto infection on top will add creamy mouthfeel
but it keeps eating booze as it grows. not much ...but a little.

Huge difference between a pH of 3 and 4, as pH is logarithmic. What's your gravity? That'll tell you whether it's done or stalled due to too much acidity.

Mine started at 1.058 and ended at ~1.0018 too, so I'm glad to see I'm in common with someone else. It wasn't heading any lower.
You've got the added benefit of a possible infection. Not me.
Please post how yours tastes when you're done.
I want to compare to mine if you don't mind.
Mine is a swirl of exotic(?) flavors with a rich "bottom" to it. Definitely unlike a sugar.
Not menthol by any means, but a menthol effect of grainy vapors flirting with the nasal cavities and breath intake.
I hope you enjoy yours as much as I am.

Holy smokes, it's so good. It has that fantastic honey malt aroma and deep grainy flavor. I will certainly make more!
