Coffee Bay Whiskey - Roasted Specialty Grains

With all the recent talk about specialty grains, I'll add this one for everyone to try.

It's a Russian Imperial Stout beer recipe that I've changed up to fit a bourbon grain bill. It can also be made as a straight whiskey without the corn.

This is for a 10 gallon batch.

Grain Bill
-11lb Cornmeal
-6lb 2row
-1.5lb Roasted Barley
-1lb Special B Malt
-.75lb Chocolate Malt
-.5lb Carapils

Other Ingredients
SebStar-HTL
SebAmyl-GL
US-05 Yeast
Lactic Acid

Mashing
-Add lactic acid to 10 gal of water to get the pH to 6.5.
-Bring water up to 200*+.
-Slowly stir in 11lbs cornmeal and let the starches gel up.
-Add SebStar-HTL @ 178* to liquefy the starch. Hold mash above 170* for 20 minutes.
-Cool mash down to strike temp of 151*.
-Add the milled malt. Temp should settle around 145*.
-Mash at 145* for 1 hour, stirring every 15 minutes. (I use blankets to insulate my pot.)
-After and hour long mash, let mash temp fall to 140* and add SebAmyl-GL. Hold mash above 135* for another 15 minutes.
-Once the mash time is up, cool mash to yeast pitching temps, aerate and add 2 packets of rehydrated US-05.

Starting SG should be in the neighborhood of 1.065.

I cut this one pretty conservatively, not knowing what to expect. After a year in a used Balcones barrel with about 20 meduim toasted oak cubes, it came out very nice. Dark roast coffee finish with a little dark chocolate.

I've made both SoCD's Honey Bear and Sundae Chocolate Bourbons and like these specialties.
I had to look up the flavors of Special B and Carapil.

I see this recipe in my future.
(Could this also qualify as a bourbon since corn is 53% of the bill?)

Yes.

I'm going to give it a try without the corn next time and compare the 2.
