1st attempt at making wine....
My gf is really big on apple wine, so I figured I would try my hand at making some apple wine and see what happens..... does anyone have any recipes or tips on this??
Re: 1st attempt at making wine....
Five gallons of preservative free apple juice
2 lbs of dextros (corn sugar)
One packet of Nottingham
Mix it, shake it, ferment it, cold crash and enjoy!

Nutrients if you don't want rhino farts. Seriously, look it up.

I'll vouch for the think farts, watch your temps while fermenting as well, trust us.

Congratulations! This is a fantastic place to start!
IMHumbleO, you can't go wrong with Kirkland Apple juice. It's $5 per gallon, grab six gallons. That's $30.
Grab cheap champagne yeast. That's another $2.50
Grab enough sugar to hit your desired starting gravity, I recommend 9.5 -10.5%, dissolve the sugar in a gallon of apple juice, or keep one for back sweetening, and use a gallon of distilled water. Boil the water add the sugar, mix into fermenter, pitch yeast, aerate. Sit back and come back to it after 3 weeks.
Rack it. Keep a sample to gauge (should be very dry, minimal flavor)
Age a month or two. Rack. Re taste. Back sweeten as desired
Or continue to age as desired
Simple, cheap, keeps you drinking for some time once it's ready

Re: 1st attempt at making wine....
Unless you want it super dry stay away from Champlain yeast. There are a lot of things to consider when making wine, what kind of wine do you want to make? Dry? sweet? semi sweet? dessert? Iced Apple? Do you want it carbonated or still? I personally like Iced Apple so my recipe is 10 gallons of fresh pressed apple juice from the sweetest apples I can find. I condense this down by freeze concentrating until it is 5 gallons at around 1.110-1.124 I then add Wyeast 4184 Sweet Mead yeast which can only reach about 11% so it leaves a lot of residual sweetness. If I'm making hard cider I just use plain apple juice and 1122 or D-47 but there are plenty of others that do fine, I don't concentrate the juice. When it's done fermenting and I'm ready to bottle I add a can of frozen concentrated apple juice for priming.
