I’m ampHoteric.
Ampholytes are molecules which can act acidic or basic but spend most of their lives in the neutral zone. Seems to fit. Mostly I’m easy going but I can ride to the occasion and be quite caustic when necessary.
So it took me to quit drinking to finally get around to building a still. As such my interest is primarily in pure spirits. Ethanol is a wonderfully useful fuel, solvent, antibacterial agent, great for making tinctures and hydrosols and on and on. I’m sure I’ll end up making some wonderfully flavored spirits as well for family and friends.
