What is it in Tomato Paste that yeast love so so much?

I'm blown away that I have a near dry ferment in only 4 days. I haven't been doing this long but I'm used to 30 day ferments. :mrgreen:

Next time, instead of tomato paste, I'm going to try tomatoes. The paste has a bitter taste so I imagine using whole tomatoes would make a slightly tastier wine.

This reminds me too, I should probably be eating more raw tomatoes myself!

Don't forget since paste is condensed tomatoes, you'll have to use more fresh tomatoes.
For cooking recipes... tomatoes:paste = 2:1 ratio.

You have a very discerning taste buds as most of us that have used tomato paste cannot taste it. I have even known some to add it to their rum washes for added nutrients.

But if we can taste the tomatoes or not and whether we like them or not, we still have no answer to the question, what it is that yeast likes so much. I do not like tomatopaste, but I would like to know why yeast likes it so much.

So please: if someone knows the answer tot that question, let him tell us.

Only at whole foods can you worry that you don't have enough molybdenum in your diet.

At 20% that one rare earth tomato lol

I had a tomato beer one time. It was half barley and the rest tomato. It was great, and I would never have guessed tomatoes were the main ingredient had not been told. Great body.

I would assume it's the RDA (45 micrograms), though it's more fun thinking about it as the % of the tomato :lol:
