Cream liqueurs
Has any of you guys tried making cream liqueurs?
I tried the old recipe of sweetened condensed milk and nestle evaporated milk, but added emulsifier to bind the cream base with the alcohol so that no separation occurs. The taste is almost there, but not quite. Texture is way off!
Any one tried a recipe that works?
What about the brew craft goodies?
I’m looking for that baleys/amarula vibe.

I have the recipe for Cape Velvet Cream as 1 tin condensed milk, 1 tin fresh cream, 1 tin brandy, thicken with tsp gelatine disolved in hot water (I dont bother). Flavour with tsp or 2 coffee kr marula essence (I bought some near Hartebeespoort dam) but I also have a bkg bkx full of marulas in the fridge.
I think there is a recipe for Baileys on the parent site.
I recently made a Kalua clone, but added too much coffee. As an experiment I mixed it with equal amout of fresh cream and stirred in a few tsps Nestle Nesquik chocolate. The family loved it.

How long does it last with fresh cream?
The alcohol should keep bugs from spoiling it, but might need stabilizer to prevent the cream from changing ph?(aka going sour)

I have a good recipe for baileys Irish Cream. But I decided to look at recipes in a book I love called HOMEMADE Liqueurs and Infused Spirits. I have yet to have a recipe in the book that I have not liked. In the book they recommend making a creamy simple syrup to add to drinks that they recommend using within two weeks. I should say they do have liqueur recipes that they suggest using them in, but if any of these sound good I will post the recipe for making them.

The advantage to this is you only make it and the amount you need when planning on using them.

We made a really good Bourbon Cream by blending a tote of a cream base from Ultra Pure with our bourbon. The cream base comes in a 264 gallon tote at 17% abv and is shelf stable. Blending involves matching the Ph of bourbon to the cream base and whatever flavorings you want to add. From a craft distiller perspective, this was a much easier solution for us as Ultra Pure already has an approved formula with TTB for the cream base.

Dont know how long the cream liqueurs will last. They get drank within a day or 2 without fail.

Bailey's Irish Cream
Ingredients
1 cup whiskey
1 (14 oz/414 ml) can sweetened condensed milk
1 cup whipping cream, light cream, or half and half
3-4 small eggs (optional, I usually don't add them)
2 Tablespoons chocolate syrup
1 teaspoon instant coffee granules
1 teaspoon vanilla extract
1 teaspoon almond extract
Steps
1. Assemble the ingredients
2. Measure and pour all of the ingredients into a blender. You can also add an additional teaspoon of coffee granules and vanilla extract.
3. Blend everything together for 30 seconds on high speed. Make sure the mixture is smooth in texture.
4. Store in well sealed bottle.
5. Place bottle in the refrigerator and let chill.
Duck Fart
1 portion whiskey
1 portion either Kahlua or Amerato
1 portion Baileys
I also make my own Kahlua and Amerato. I personally prefer the amerato. I put them in small glasses and set in freezer. It makes a great dessert drink after dinner.

I think I’m going to try replacing the nestle evaporated milk from my recipe with half and half and see that how goes.
