Malting Corn!

Hello,
I’ve wanted to malt some corn for quite a while now, but due to work, kids, etc.,
I don’t have the time to spend DAYS, to spend doing it!
So I’ve been studying the process, and different designs from 1lb to 100 Ton units!
10lbs is sufficient for me! So after reviewing several builds. I decided on a design
( not my design ) but my genius will be incorporated into it

I went a tumbler design, using a 5 gallon bucket, I have the base, and most of the bucket finished,
Just a couple final things, then on to my design for a AUTO water cycle, as I cannot be here every
few hours to wet the grain! After completed, I will build a drying rack, and de-rooter!

But that will come later! ( I will post my completed design soon! With a walkthrough! )
But I’m very happy so far!

Hey ( Bitter ),
Just wanted to give you a heads up!
My malting rig was a TOTAL FAIL! Bummer.
LOTS of issues, and several re-vamping issues,
to end up with ( very foul ( dog poo like ) smelling corn!
YUCK!
That never sprouted!
So
Conclusion
( corn I bought was kiln dried and dead ), and/or?
I kept it too wet,?
Malting rig was wrong?
Left to soak for too long
Still not sure, so trashed it all! Went out with Tuesday’s trash!

So fast forward to now:
Wife purchased me 6lbs or white baby popcorn, and 6lbs of yellow baby popcorn,
All organic! ( and very clean and maybe 6-8 bad kernels so far out of all of it! )
So
I soaked 2 lbs ( each white-yellow ) in separate containers, about 16-18 hours
Forgot to mark down when I started, but know within an hour or 2 ) lol!
Drained the kernels, ( spaghetti strainers )
Pleased the kernels in 2 ( 8”x10” at 4” deep Pyrex glass casserole dishes.
Covered with a Med sized hand towels
Placed in guest bathroom with a/c vent OFF, and window open ( about 78 degrees F. )
After 48 hours ( stirring the kernels ) only occasionally
I have sprouts ( both white and yellow ) sprouts are maybe 1/4” long now or a
Bit larger, but this is SOOOOOOOO much easier, I did spritz them today with fresh water,
As they seemed a tad bit dry on top! But SUCCESS!
Just thought I’d share my findings! I wish this site was easier to post pics without photo sharing!
I have some good ones!

Since I took the video down,
I’ll post a few pics of the malt tumbler.
I had to reposition the guide wheels, make the bucket inside
Paddles smaller, add the black insulating tape ( 2 rows )
And the bucket would still get stuck and drive wheels burn through the
Insulating tape ( like in the pics ) I’d have to bump it to get it going again!
Main reason I aborted the rig!
( getting great results doing it the old fashion way! Manual!
Little elbow grease is never a bad thing!

Don't give up on the tumbler, it looks like it should make a good airdryer
Have you tried using screen bottomed malting trays yet

No, have not tried that.
I am building a drying rack as we speak.
A base that holds a box fan horrizontally ( air flow UP )
Then the 4 post taper inward as you hey rise up to around 5’
Holding 3 trays each slightly smaller than the previous one.
Trays are wooden sided with metal screen den bottoms
( will post pics of the build soon )
Like a Indian tee pee tent but with trays going up.and no cloth sides!
But interested in what you brought to the table!
Is there somewhere I can see these malting trays?
The approach I’ve taken this time is really simple, just now and again spritz and
Stir ( gently ).
So far so good!
Then once at drying stage
I’ll construct a tumbler for de stem and de rooting the seed!
Basically a metal ( mesh ) style tumbler that will agitate seed ,
Allowing stems and roots to fall through the holes, as it gets. agitated!

The auto water thing I gave up on, too many variables to consider


If you can see poly further info , I’d surely appreciate it!

Very easy to build,
I can supply all dimensions , etc .
I bought all from Home Depot.
The rotisserie was the only expensive part at $44
The rest is cheap, mostly just time!

J Dot might also want to look into a percentage of peroxide int he soaking water.. for malting corn.. Old boys used to put in a stream of moving water to soak. Normally spring fed or from the mountains.

Your setup will malt both barley and wheat very nicely.. Plan on getting some corn this fall direct from farmer before going through the drier to try malting..

As usual, great advice!

It always made sense ( in a stream or constant clean water flow )
As to WASH away anything unwanted ( bacteria, yeast, or any other nasties )
Living on the corn!
( same reason I DO NOT take baths! Only showers, as I cannot bring myself to sit in my own dirty water! )
Pet peeve I guess?

Peroxide ( I’m extremely familiar with ) as we whiten pool surfaces with it, but wear full hazmat suits doing
It, very dangerous stuff! (In its pure form! ) cannot even buy it without a liscence!
But I can see I need to hit the books! Was unaware this was or could be an issue?

I used distilled water to soak! Not sure if that makes a difference?
Then rinsed with fresh distilled water before placing into malting trays ( Pyrex bowls )
However I do use sink water to spritz them now and again!

My issue was SMELL!!!!!!!!!
No one talks about SMELL! Which upsets me!
As it is the first sign of a problem! And I had no idea what it was
Supposed to smell like?

Healthy - pleasant RAW corn or soaked corn ( like if you were grilling the corn ) smell ( your doing good )
But:
Not healthy - bad, dog poo smelling , rotten, or any other UNPLEASANT odor ( discard! ) it’s no good ! Start over!

Now that I know, it’s day 4 and still strong! As you can see NEARLY ready to dry and de-root!

J Dot as you read through the back threads you'll see that the "Smell" is part of the sprouting possess, even bad smells. It's the enzymes that the grain releases they convert the starch to sugar and start the sprouting . As the grain sprouts and dries, and you malt them, the smell goes. (I've malted barley, it stank, but the results were excellent) Now that being said...some of the smells will carry over and may be necessary to add the expected flavor to good corn liquor. One of the smells to keep your nose open for is butyric acid, this will give you a smell of vomit, I know it sounds and smells terrible, but if you get it, keep it! In fact if you are going to make rum at all you'll need this to make a good "Navy Rum". So put some aside for your rum days ahead, zip lock bag it and freeze it.

This is great advice! Rum is in my future, ( wife’s favorite ).
Mine kinda smelled that way, but more like dog poo. Turned my stomach
To smell it! Gagged once or twice throwing it out!
( I, unfortunately , happened ina decomposing body when I was young,
And the smell is comparable ) it really was bad, and the same result 2 times in a row
With bulk dried white corn ( very large kernels )
This baby popcorn almost malts itself! And the smell is very pleasant, almost edible smell!
But what you say makes sense, and am looking forward to reading about it more in depth!

Well day 5, and I believe we are done!
Did have an unexpected incident happen!

( I found a few GREEN kernels ( moldy like ) in only the yellow corn,
None in the white, but it looks like bad or broken seed, however one grew?
I removed them, closely scrutinized the rest!

I agree with whomever said use some peroxide, that will keep the nasties at bay while you sprout. They sell 35% food grade peroxide that does not use a stabilizer, you can just water that down to 3% using distilled or reverse osmosis water if the stabilizers concern ya.

I have never malted corn only barley and rye, hadn't really thought about it being harder to remove the roots from corn sprouts, was a non issue really when I malted rye.

That green on your sprouts is most likely Trichoderma, its spores are everywhere. If you would like to try something besides hydrogen peroxide, a highly alkaline lime rinse would have nearly the same effect at keeping the green away.

If malting was easy, everyone would be doing it.

Kiwi Bruce ( Thank you ) I’m SOOOOOOO excited! I guess the 3rd time really is the CHARM!
( and my wife ( best friend really ) , has been getting into it, since this round of malting!
Which is ODD! But exciting as well! She called me at work today, excited to let me know she SPRITZED,
And turned the corn for me ( bringing bottom corn to top, and top to bottom ) on both trays!
As I was concerned last night ( getting close to done ) and not being able to tend to it!
WOW! ( she lets m do what I want, but she stays OUT of it ( all together ) until now! )
Maybe it will turn into a hobby she can also enjoy! Hmmmmmm? How cool!

Honestly;
I did not think it would turn out after 2 failures, but when it did, I made a plan, but due to long hours at work and
Father’s Day festivities ( really PURE LAZINESS ) it finished before I did! My dryer stand is not near finished!
So
I’m sitting on 2 ready mashes, 2 trays of malt ready to dry, no dryer, no time, ( except to complain ) lol
So
( you guessed it, I IMPROVISED! )
Pics below:
However, I plan to fan dry it, down mostly, however slower than sunlight ( but between critters, squirrels and ravens )
I’d have a nice shinny clean pan, in a short time , in the sun!
So will finish drying in my oven ( under my watchful eye )
And ( again not ready on the de root tumbler )
I’ll use the ole’ pillow case in the dryer ( low heat ) gimmick!
Gonna keep this simple, will try smoking or roasting them a bit over oak coals,
Or some apple wood ? But need more info there before I attempt that!
But this was honestly for a all grain mash ( all corn mash ) no sugar no yeast !
As for grinding I do have a grain mill ( hand crank ) but she works great! If I want a
( flour or meal blend I have to run it through 2-3 times. But not 100% sure yet?
I’ve always used a blender to roughly chop my malt ( barley or distillers ) store bought,
But some claim meal style is best ( mine is a bit tougher than a corn meal would be, others
claim FINE POWDER is better? I’ve never completely powdered up anything I’ve ever used?
But again, I’m still new, maybe 2 batches, one of each to reach my own conclusion?
But really shooting from the hip here, good friend!

Here is what I got going the pics:
( the first pic is for anyone intersted in malting, or starting out )
As a little bit of dry corn, turns into a PILE of malt, the jar is what I started with
Of dry pop corn! You see the result! Just be prepared and Malt accordingly! I recommend 2lbs for first try!
Easily managed, plus if you lose it, no biggie! Losing 10lbs at a time, can take a toll! Lol

I spread the malt as thin as I could on pizza boxes ( tin foil coated ) and a cookie sheet, also foil coated, with a
Fan ( just out of pic ) blowing across my trays ( I just give them a quick stir now and again, the mini space heater
Was going to act as de humidifier ( but not needed ( a/c and fan is working nicely )

Hello
So after 24 hours under a fan ( stirring occasionally )
This is what we have:
( next will be 1 hour in the stove at 176F ( or 60 minutes at 80C )
Then will use a strainer to separate grain from the roots and shutes!
Then store until ready to use!
A quick run through the mill to crush it up, and hopefully , a quality product!

This is why the Japanese wash themselves BEFORE they bathe. Try it, baths are the best place to smoke potry to relax.

Ok
As we speak my corn ( both ) is in the oven ( 80 C or 176 F )
1 hour.

All I’m doing is every 15 minutes , I’m giving BOTH trays a stir!

The Smell is fantastic!
