Hi I'm new here and have spent some time with most of the required reading. By chance with no instruction I chose rum to start with, that seems to be a good choice according to the degree of difficulty scale. I am fed up with buying rum from the store that even though is beautifully labeled tastes like paint thinner.
I Have done this twice once last year and then last month with the same approximate recipe which involved the following ingredients. After reading through I am not sure of what I made, is it rum or something else ? what I can say is does NOT taste like paint thinner and after a couple of weeks has gotten quite smooth to my palette .
Turbinado sugar 1lb per gallon and approx 5 quarts of mullberries one package of champagne yeast. For the mulberries I did them two ways in my first attempt I juiced and strained them then added them to the mix at the begining of the vapor lock ferment. In the second attempt I squished them all up in an open ferment seeds and all for a week then strained and added that to my sugar and water champagne yeast with the vapor lock. In the end after distilling it twice through my 3gallon stainless rig wirh a thumper it yielded about 2.5 liters of 180 pf and about 16ounces of 70 prf finally I added a few drops of vanilla and charred some hardwood splits and dropped them into the bottles. What did I make here?
