During a Gin and Vodka festival near me, I found that a lot of people judge the product based on how "smooth" it is compared to flavour profiles. Basically if it goes down without that "bite" or deep breath then its considered "good".
How does one make a "smooth" gin? Is it lower ABV? Post distillation carbon filtering? Multiple distillation? The actual still used?
What properties make a spirit "smooth"?
