Pot still Irish whiskey

I have recently been having some pretty good success with my croweater rum, seems like the bottle of Bundaberg hasn’t been touched by anyone when croweaters is available, so I have decided to branch out and try a pure pot still. I’ve been back home in Ireland recently and went to the Middleton distillery where I got talking with one of their junior distillers he mentioned that originally pure pot still was made with 60% malted 35% unmalted and 5% oats. Just wondering if anyone has made a recipe similar to this or has any pointers. I am going to use rolled oats, 2 row distillers malt, and flaked barley as standard raw barley is a pain to find around here. I will pitch Belgian ale yeast to try and get some fruity and spicy flavours to come across in the distillate then triple distill. Any one see any major problems with the plan?
