Wheated Bourbon Recipe

Here are my thoughts on my next recipe:

12.5lb Flaked Corn = 51%
8lbs Malted Wheat = 32%
4lbs Barley = 16%

24.5lbs grain - 10 Gallons wort = 2.45lb/gallon grain ratio

This will be a BIAB - Round Igloo style Mash Tun...

Bring about 6-7 gallons of water to 180ish... the Corn will be in the Mashtun in a bag, pour hot water over it. I will stir it every 15-20 minutes... add amalaze periodically until the temp comes down below 160, then I will add the remaining grains.. (I will divide into two mash tuns if I have too..) Stir, add amalaze if needed... In the past, I have let these sit over night, and the next day the mash temp was 135degrees.

Stay in the mash tun until it all gets converted.

Will sparge with hot water, to make up the 10 gallons that I want to ferment... Hoping for 1.065 ish or higher SG...

After that,

Do the same recipe, but no Wheat, I will use same amount of Rye 8lbs Malted Rye...

Then I can do a side by side taste comparison.

You should end up right around 1.065-068. Good luck getting flaked corn to sparge. I've resigned myself to grind my corn to meal since my feedstore stopped carrying ground corn and ferment on the grain.

What yeast you gonna use?

Flaked corn (in a bag) and malted rye will be a tough lauter. It sounds like a “sticky mess” to me. Good luck with it.

Even so a couple of handfuls of rice hulls wouldn't hurt. Even with BIAB.

I have used 50% flaked corn several times with zero problems in my RIMS. I do add rice hulls as a practice. However, I have not done it in conjunction with that high of a percentage of wheat.

Sounds good, xring01! Love a good wheat addition!

(FWIW: Since I got a dedicated mop wringer bucket, BIAB has become a breeze. Even the "sticky cement" grains. Just a suggestion...)

I have used my hands and squeezed in the past..

The mop bucket has crossed my mind many times, not sure I would use it enough to justify storing the damn thing.

Idk, it seems the only size worth worrying about quantity of wash wise would be too hard to lift by hand. Ymmv. That said, this IS one of the coolest ideas.

OK, Just bought my raw materials... They were low on flaked corn.. So the recipe got modified a bit...

10lbs Flaked Corn = 51.25%
6lbs Wheat Malt = 30.75%
3.5lbs Ca Select 2 Row = 18%

Thinking 9 gallons water = 2.17 ratio of grain/water...

Will get this mashed in tonight or tomorrow.

You just squeaked in for bourbon's 51% corn. Glad they had enough for you!
And your diastatic power is somewhere near 64.
You should be producing a nice drink. I wish you success!

Mashing - Brought about 10 gallons of water to pretty damn hot, guessing 160-170 degrees, couldn't find thermometer. While water was coming up to temp, I cleaned and prepped the 10 Gallon Round Igloo cooler, put the Mesh BIAB bag and all the grains in the cooler. Mixed the grains up good. (See grain bill in a few posts up).

Once the water came up to temp, I poured hot water over the BIAB Grains , filled the cooler to about 9 gallons (guessing- 2-3" from top) stirred it up very good. I did not add any amalaze.. just the bag, grains and water. Put the lid on it. Stirred about every half hour for a few hours... Went to bed. Next morning check the SG which was about 1.060.

I was very happy with that, very little effort so far.. Added a bit of amalaze to see if I can get any more conversion. Gave it another good stir...

I will probably stir it again in another half hour... and do another SG reading in 3 hours...

Hoping for 9 gallons total mash, 1.060 area...

Once I am confident, I have everything converted, I will drain the wort off the grain, sparge a bit of warm water over the grains, drain again... get a final SG Reading

Edited, its been about 3 hours, I Need to finish this up, to start another project... so I drained, sparged cold water, got about 10 gallons of wort at 1.055... Not as high as I wanted, buttt, I did use about 10 gallons, with 1.95lb/gallon ratio..

Plan is to ferment off the grain...

Overall, its a pretty easy process, I am happy with the results... Waiting for the wort to cool, and I will pitch the yeast, and get the party started...
