Strawberry Guava

I've done some all grain, Pilsen Light Liquid Malt, and fruit fermenting and distilling in the past.

I've now come across a number of patches of Strawberry Guava that will ripen over the next month or two. It will take many harvests to have enough to ferment and distill. So plan is to harvest some each time, luquidfy in a blender and store in mason jars. I guess I'll have to pasteurize the jars to kill any wild yeast action until I have like 5 or more gallons of liquid to ferment. The jars can be stored at about 60*. Does this sound like a plan?

Don't get confused there is a difference between Strawberrys and Strawberry Guava.

Wouldn't it be easier to store by freezing ?

Yes shure would, but I don't have the freezer space.

Your going to lose it if you don't freeze or refrigerate it I have two trees of them they don't keep well.

Roger that Sunshinner....Got a chest freezer and a few fruit harvested and frozen. Missed most of the season, they will have to wait for next season for additional juice. LOL You curz you loose.

I have tried making likker out of them, but now I use them for flavoring or snacks. Birds like them and we like having birds in our garden.
