The pH is the logarithmic measurement of hydrogen and hydroxide ions present in the solution, with the lower the pH the more H ions present.
A measurement in a solution can be taken anytime including before, during, or after fermentation activity has started. You can also check the pH of the water used to mash your cereal grains as well, considering that pH will affect the activity of enzymes to convert starches to sugars.
The pH is NOT a measurement of the “fermentability” of the wash or the sugar potential. It is only a measurement of the ion concentration in the solution.

Thanks for that I understand what your telling me I was doing wineos sugar wash but used ec1118 yeast as I thought distillers yeast give it a go . Seems to be doing ok but slow. . But did read that using citric acid can lower the ph and upset the yeast

1118 is notoriously slow but very forgiving of pH
It's the go-to yeast for restarting a stuck fermentation

EC 1118 is a very so ferment but it loves my 60-65F basement. The 05 and 06 largers are the same slow clean ferments.

That’s great news guys thought it was just me I’ve read other sites and there saying it’s going crazy . so I thought it could be in trouble. So thank you all for your comments I’ll let it ride as it is
